<p>Quando comecei a pensar em fazer uma cocada, eu sabia que queria algo diferente. Não só uma versão tradicional — eu queria criar um doce com mais camadas de sabor, mais textura, e que despertasse a curiosidade.</p>



<p>Foi aí que me veio a ideia de unir dois mundos que eu adoro: a cocada e o fudge. Eu sou completamente apaixonada por fudge, e achei que misturar o chocolate à base da cocada poderia trazer uma cremosidade nova, um toque aveludado que faz toda a diferença na mordida.</p>



<p>O desenvolvimento da receita não foi simples, ajustar textura, tempo de cocção, proporções… tudo exigiu testes, paciência e atenção aos detalhes. Mas o resultado valeu cada tentativa: uma cocada com textura macia, sabor marcante e uma identidade própria.</p>

<li><strong>Textura única:</strong> ela tem a estrutura firme o suficiente para ser cortada, mas com uma mordida macia, cremosa e que derrete na boca. Diferente da cocada tradicional, essa versão tem um acabamento mais liso e delicado.</li>



<li><strong>Uso do caramelo como base:</strong> a receita começa com um caramelo, que dá profundidade ao sabor e um tom dourado lindo.</li>



<li><strong>Leite de coco para mais sabor e equilíbrio:</strong> ao invés de só adoçar com leite condensado, essa receita leva leite de coco, que traz um perfume tropical, leveza e ajuda a equilibrar o dulçor do caramelo e do chocolate.</li>



<li><strong>Chocolate branco caramelizado como toque final:</strong> ele entra no fim da receita e transforma a textura, trazendo brilho, liga e um sabor levemente tostado e amanteigado. É o ingrediente que dá o acabamento de fudge e eleva a cocada a outro nível.</li>

<li><strong>Chocolate Branco Caramelizado (ou Gold):</strong> se você não tiver, ou preferir não fazer, pode substituir por chocolate branco normal!</li>



<li><strong>Coco seco:</strong> na receita usei apenas o fino, que hidrata mais rápido e contribui para uma textura mais cremosa. Se quiser mais rusticidade, você pode testar com parte do coco em flocos maiores.</li>



<li><strong>Leite de Coco:</strong> prefira sempre um leite de coco integral e mais espesso, para manter a cremosidade e o sabor marcante. Leites muito diluídos podem prejudicar o ponto da cocada.</li>

<p>Dessa vez, quis juntar essa base clássica com o toque ácido e vibrante da framboesa, que traz equilíbrio e uma cor linda. Além de deliciosos, esses caramelos são elegantes e perfeitos para presentear!</p>



<h2 class="wp-block-heading" id="aioseo-por-que-usar-pure-de-fruta-em-caramelos">POR QUE USAR PURÊ DE FRUTA EM CARAMELOS</h2>



<p>O uso de purê de fruta traz sabor e cor naturais ao caramelo, criando caramelos vibrantes, coloridos e deliciosos. Frutas como framboesa, maracujá e manga adicionam uma acidez equilibrada, que contrasta com o dulçor do caramelo tradicional, além de intensificar o aroma.</p>

<p>O&nbsp;<strong>sorbitol</strong>&nbsp;é um tipo de&nbsp;<strong>poliol</strong>, ou seja, um álcool de açúcar, com aparência de pó branco ou xarope incolor, levemente adocicado. Ele é naturalmente encontrado em frutas como maçãs, peras e ameixas, mas na indústria é produzido a partir da glicose.</p>



<p>Embora seja conhecido como substituto parcial do açúcar em produtos diet, seu uso na confeitaria moderna vai muito além da redução calórica.</p>



<p><strong>FUNÇÕES TECNOLÓGICAS DO SORBITOL EM CARAMELOS</strong></p>

<li><strong>Controle da umidade:</strong><br>O sorbitol tem forte capacidade higroscópica, ou seja,&nbsp;<strong>atrai e retém água</strong>. Isso evita que o caramelo perca umidade com o tempo, ajudando a manter a textura macia por mais dias.</li>



<li><strong>Prevenção da cristalização:</strong><br>Em receitas com alta concentração de açúcar, é comum a formação de cristais indesejados, que comprometem a textura lisa. O sorbitol&nbsp;<strong>atua como agente anticristalizante</strong>, interferindo na organização das moléculas de açúcar e reduzindo o risco de recristalização com o passar dos dias.</li>



<li><strong>Estabilidade da textura:</strong><br>Ao ajudar a manter a umidade interna e evitar a formação de cristais, o sorbitol também contribui para&nbsp;<strong>preservar a elasticidade e a maciez</strong>&nbsp;dos caramelos.</li>



<li><strong>Aumento da vida útil:</strong><br>Caramelos com purê de fruta podem deteriorar rapidamente devido à umidade e aos açúcares presentes. O uso de sorbitol ajuda a&nbsp;<strong>estender a validade</strong>, tornando o produto mais estável microbiologicamente (em combinação com boas práticas de higiene e conservação).</li>

<p>Caramelos macios feitos com purê de frutas têm umidade mais alta, o que exige cuidados extras na conservação. Mantenha os caramelos em local fresco, seco e longe da luz direta. O ideal é embalar individualmente ou usar papel celofane alimentício para evitar umidade e perda de textura.</p>



<p>A validade média é de 10 a 15 dias em condições ideais, podendo chegar a 20 dias com uso de sorbitol e embalagem adequada. Eu gosto de armazenar dentro de um pote fechado na geladeira, para evitar a oscilação de temperatura aqui de SP!</p>

<p>Os empolvados são um clássico da confeitaria chilena! São vendidos em padarias ou até mesmo na estrada. Em setembro, para as festas pátrias chilenas, é muito comum comer esses docinhos, e é por isso, que eu estou compartilhando essa receita com você hoje.</p>



<p>Chega setembro e dois sentimentos invadem o meu coração, o primeiro é saber que meu aniversário finalmente chegou, o segundo é saber que esse mês comeremos empanadas chilenas, empolvados e outras coisas mais!</p>

<h2 class="wp-block-heading" id="aioseo-ingrediente-simples">INGREDIENTE SIMPLES</h2>



<p>Para fazer empolvados, você precisa de alguns simples ingredientes, fáceis de encontrar e baratos!</p>



<ul class="wp-block-list">
<li><strong>Ovos</strong>: os ovos são o ingrediente principal dessa receita! Eles são os responsáveis por deixar a massa leve e esponjosa. Usaremos a clara e a gema separadas.</li>



<li><strong>Açúcar</strong>: o açúcar cumpre duas funções na massa. A primeira é adoçar, a segunda é dar estrutura para as claras, ajudando na textura esponjosa.</li>



<li><strong>Farinha de Trigo</strong>: a farinha é responsável pela estrutura final. O amido da farinha coagula com o calor, deixando a massa firme após o cozimento!</li>



<li><strong>Amido de Milho</strong>: o amido de milho vai ajudar a reforçar a função do amido da farinha, deixando a massa firme porém mantendo sua umidade.</li>

<p>O empolvado chileno é igual ao bem casado. Mesma massa, mesmo recheio&#8230; a única diferença é que o empolgado não passa pelo banho na calda de açúcar.</p>



<p>Dito isso, você pode e deve usar essa receita para fazer bem casados! Ao invés de polvilhar açúcar de confeiteiro na massa assada, recheie e banhe na caldinha de açúcar!</p>

INGREDIENTES &#8211; 5 claras de ovo &#8211; 125g de açúcar &#8211; 1/2 colh. chá de pasta de baunilha &#8211; 5 gemas &#8211; 25g de amido de milho &#8211; 100g de farinha de trigo MÉTODO 1. Pré aquecer o forno a 190ºC e preparar uma assadeira com papel manteiga. 2. Na batedeira, com o globo (ou na mão com um fouet), bater as claras, adicionando o açúcar em três etapas. Bater até obter um merengue liso e brilhante. 3. Adicionar as gemas uma a uma, misturando com movimentos envolventes para não perder o ar da massa. 4. Adicionar a baunilha e incorporar bem. 5. Peneirar os secos e misturar suavemente só ate obter uma massa homogênea. 6. Passar a massa para um saco de confeitar e fazer bolinhas sobre o papel manteiga. 7. Assar a 190ºC por 10 minutos. 8. Deixar esfriar, peneirar açúcar de confeiteiro e soltar do papel. 9. Rechear com doce de leite e servir. <p>Temperaturas são medidas convencionais, porém cada forno é um forno, e muitas vezes a temperatura interna do forno não está 100% ajustada ao que diz no botão. Por isso, eu recomendo que você compre um termômetro de forno, assim você pode &#8220;descobrir&#8221; onde fica a &#8220;temperatura perfeita&#8221; no seu forno em particular. Geralmente fornos elétricos são mais precisos que fornos à gás, porém, com a temperatura ajustada e correta, você pode assar qualquer receita em qualquer forno.</p>

<p>Doces com amendoim são uma tradição tão gostosa da Festa Junina, que chega a ser um insulto passar sem comer ou preparar nenhum quitute né?! Pois bem, hoje eu trouxe essa receita de Pé de Moça, que é um derivado do nosso tradicional Pé de Moleque. A principal diferença entre os dois é a TEXTURA!</p>



<p>Enquanto o Pé de Moleque tem essa textura crocante de caramelo seco, o Pé de Moça tem uma textura mais cremosa e fácil de mastigar. A textura me lembra bastante os &#8220;Pecan Pralines&#8221; de Nova Orleans (que também são deliciosos).</p>



<h2 class="wp-block-heading" id="aioseo-ingredientes-faceis">INGREDIENTES DO PÉ DE MOÇA</h2>



<p>Os nossos doces tradicionais sempre utilizam ingredientes fáceis de encontrar e que temos em abundância aqui no Brasil.</p>



<ol class="wp-block-list">
<li><strong>Açúcar:</strong> nosso açúcar de cana maravilhoso é uma iguaria brasileira difícil de encontrar em outros países (onde o açúcar é de um tipo de beterraba), ele se transformara em um caramelo âmbar perfeito.</li>



<li><strong>Amendoim:</strong> precisa ser torrado e sem pele! Ele é quem traz o gosto de infância e brasilidade!</li>



<li><strong>Leite Condensado:</strong> vai ajudar a transformar o que seria um pé de moleque em um caramelo mais cremoso e elástico.</li>



<li><strong>Glucose:</strong> pode ser omitida, porém a glucose vai garantir que o doce não se cristalize e que mantenha o seu formato de corte sem derreter.</li>



<li><strong>Manteiga:</strong> com a sua gordura, ajuda no brilho e na textura final.</li>



<li><strong>Sal:</strong> onde tem açúcar, tem sal! O sal realça o sabor de tudo, deixando o doce mais interessante e delicioso!</li>

<p><strong>MEU PÉ DE MOÇA FICOU MUITO DURO</strong></p>



<p>Provavelmente isso aconteceu porque você cozinhou demais a mistura e passou do ponto, nessa caso já é possível ver que a textura quando colocamos na forma é mais dura, e da para corrigir aquecendo novamente e adicionando um pouco de leite.</p>



<p><strong>POSSO USAR PAPEL MANTEIGA NO LUGAR DO PLÁSTICO FILME?</strong></p>



<p>Eu não recomendo, isso porque para usar papel manteiga, teríamos que untar o papel com manteiga para não grudar no pé de moça. Já o plástico filme não gruda, não precisa ser untado e facilita na hora de desenformar.</p>



<p><strong>COMO ARMAZENAR O PÉ DE MOÇA</strong></p>



<p>O pé de moça deve ser armazenado fora da geladeira, em temperatura ambiente e fechado. Pode ser embalado um por um, ou fechadinhos todos juntos com plástico filme.</p>
