<p>Torta de Limão é um clássico da confeitaria e eu sou apaixonada por tudo que tenha limão, então para mim, ela é a sobremesa perfeita para qualquer época do ano!</p>



<p>Essa é a minha receita de torta de limão favorita, eu sinto que a proporção de suco de limão versus leite condensado é perfeita para manter o toque ácido do limão e não deixar um sabor enjoativo. O contraste entre a massa com um toque de amêndoa e o recheio ácido também deixa tudo ainda mais delicioso! Então vamos lá…</p>



<h2 class="wp-block-heading" id="aioseo-massa-sablee-facil">MASSA FÁCIL E DELICIOSA</h2>



<p>Para essa tortinha eu usei a minha massa sablée coringa, que além de muito fácil, fica super deliciosa! Ela leva ingredientes simples com um twits de farinha de amêndoas.</p>



<ol class="wp-block-list">
<li><strong>Farinha de trigo</strong>: a base de qualquer massa é a farinha de trigo, que deve ser sem fermento sempre!</li>



<li><strong>Farinha de amêndoas</strong>: eu sempre adiciono um pouco de farinha de amêndoas na minha massa de torta, assim a massa fica com um sabor amendoado delicioso depois de tostada!</li>



<li><strong>Açúcar impalpável</strong>: eu gosto de utilizar açúcar impalpável, porque com ele a massa fica super lisa. Mas você pode perfeitamente utilizar açúcar refinado.</li>



<li><strong>Manteiga</strong>: a manteiga deve estar sempre gelada e em cubos pequenos, assim fica mais fácil de incorporar.</li>



<li><strong>Ovo</strong>: o ovo é o que da a liga da massa, mas também é o responsável por ajudar a melhorar o sabor e a “blindar” um pouco mais a massa depois de assada.</li>

<h2 class="wp-block-heading" id="aioseo-recheio-cremoso-de-limao">RECHEIO CREMOSO DE LIMÃO</h2>



<p>O recheio não poderia ser mais fácil e delicioso! Aqui no Brasil o recheio mais comum é misturar o leite condensado com o suco de limão, na minha versão, eu adiciono algumas gemas e volto a tortinha para o forno por alguns minutos. Vem entender:</p>



<ol class="wp-block-list">
<li><strong>Leite condensado</strong>: o leite condensado é perfeito para esse recheio, além de já ser uma mistura mais espessa (que vai reduzir muito o tempo de forno), ele já vem adoçado e faz com que o recheio seja super simples de fazer.</li>



<li><strong>Suco de limão</strong>: eu fiz com limão siciliano, mas você pode usar o limão taiti se preferir.</li>



<li><strong>Gemas</strong>: além de ajudar na cremosidade, as gemas serão responsáveis por fazer com que o recheio se mantenha firme, deixando o corte perfeito.</li>
</ol>



<h2 class="wp-block-heading" id="aioseo-merengue-suico">MERENGUE SUIÇO</h2>



<p>O merengue suíço é meu favorito, isso porque ele tem a leveza do merengue francês, porém com a estabilidade do merengue italiano! <h2 class="wp-block-heading" id="aioseo-quero-fazer-uma-torta-grande">QUERO FAZER UMA TORTA GRANDE</h2>



<p>Para transformar as mini tortas em uma torta grande (de 24cm de diâmetro mais ou menos), você não precisa fazer nenhuma alteração na receita, basta seguir as mesmas quantidades e alterar alguns tempos de cocção.</p>



<ul class="wp-block-list">
<li>Tempo de cocção da massa: assar a massa por 10 minutos com peso e depois 5 minutos sem peso.</li>



<li>Tempo de cocção do recheio: assar o recheio por 15 minutos (para que o calor consiga penetrar na maior quantidade de recheio junta).</li>

<p>Faz alguns dias que uma seguidora me pediu lá no TikTok para fazer muffins de morango com limão, e automaticamente eu pensei “que delicia!”. No dia seguinte eu já estava comprando morangos belíssimos, aproveitando que estamos no auge da temporada de morangos por aqui.</p>



<p>Eu gosto muito da receita da base desse muffin, porque ela é tão fácil e rapidinha de fazer, e fica tão tão esponjosa! Eu uso essa mesma base para os meus Muffins de Blueberry com Limão. Para essa de morango, e usei um pouco da minha <a href="https://www.thinkingsweet.com/2024/06/24/geleia-rapida-de-morango/" target="_blank" rel="noopener" title="Geleia Rápida de Morango">Geleia Rápida de Morango</a>!</p>



<h2 class="wp-block-heading" id="aioseo-crumble">CRUMBLE</h2>



<p>O muffin tem uma camada de crumble por cima, que é muito fácil de fazer, a única diferença nesse caso foi que eu adicionei raspas de limão siciliano para dar um frescor.</p>



<p>Esse crumble é uma receita base, que pode ser utilizado em várias outras preparações. Você pode preparar o crumble com antecipação e mantê-lo na geladeira por 2-3 dias, ou você pode congelar crumble para ter sempre à mão. Congelado ele dura 3 meses.</p>

<h2 class="wp-block-heading" id="aioseo-como-armazenar-muffins">COMO ARMAZENAR MUFFINS</h2>



<p>Eu gosto de armazenar os muffins em um pote com tampa, em temperatura ambiente. Dessa maneira, eles duram 2-3 dias perfeitos. Para congelar, coloque os muffins em saquinhos ziploc e coloque no freezer. Congelados eles duram 3 meses, para descongelar, deixe em temperatura ambiente e na hora de servir, leve ao forno por alguns minutos. Muffins congelados ficam muito melhor depois de alguns minutos no forno.</p>

<p>Se tem uma coisa que não pode faltar aqui em casa, é essa geleia de morango! Todo mundo ama, vai bem com tudo e é facílima de fazer. Quis aproveitar que estamos na época perfeita para morangos para repostar e publicar aqui no blog pra você todas as dicas para sua geleia ficar sempre perfeita! </p>



<p>Essa é uma receita básica, que nós vamos usar bastante pra diversas preparações como as Pop Tarts de Morango e os Muffins de Morango Limão e Crumble.</p>



<h2 class="wp-block-heading" id="aioseo-ingredientes-faceis-de-encontrar">INGREDIENTES FÁCEIS DE ENCONTRAR</h2>



<ol class="wp-block-list">
<li><strong>Morango</strong>: nesse caso usamos morangos frescos, mas você pode usar congelados ou outra fruta vermelha que preferir.</li>



<li><strong>Açúcar cristal</strong>: eu particularmente prefiro fazer as geleias com açúcar cristal, isso porque ele tem menos impurezas, deixa a geleia com um aspecto brilhante e cristalino que eu amo. Porém, você pode perfeitamente usar açúcar refinado.</li>



<li><strong>Limão</strong>: para essa geleia usamos tanto as raspas quanto o suco do limão que pode ser siciliano ou taiti. O limão além de deixar a geleia mais saborosa e interessante, vai reagir com a pectina natural da fruta, ajudando na textura </li>

<h2 class="wp-block-heading" id="aioseo-sobre-proporcao-de-acucar-e-temperatura">SOBRE PROPORÇÃO DE AÇÚCAR E TEMPERATURA</h2>



<p>Um dos pontos mais importantes para uma geleia bem feita e com bom sabor, é a proporção de açúcar versus fruta. É muito comum ver geleias que tem uma proporção de 50% de fruta para 50% de açúcar. Essa proporção, na minha opinião, faz com que as geleias tenham um sabor mais padronizado, porque a alta quantidade de açúcar vai “mascarar” a qualidade/sabor da fruta.</p>



<p>Quando usamos fruta de boa qualidade, a ideia é potencializar o sabor da fruta, usando menos açúcar, que vai resultar em uma geleia menos doce e muito mais saborosa. Porém, é importante lembrar que o açúcar é o que vai dar a textura de geléia à fruta (então não da pra tirar o açúcar e não colocar nenhum tipo de endulcorante)</p>



<p class="has-text-align-center"><strong>A proporção que sempre uso e recomendo é 70% de fruta para 30% de açúcar.</strong></p>



<p>A temperatura também tem um papel importante na produção da geléia, ela é quem vai fazer com que o açúcar derreta, a água evapore e a pectina se ative. Transformando a fruta macerada em uma geleia brilhante, viscosa e encorpada. Evaporar a água da fruta vai garantir que a geléia dure mais tempo, sem mofar. </p>

<p>A geleia fechada em um recipiente hermético, dura até 6 meses em um lugar seco, fresco e longe do sol (um armário). Depois de aberta, a geleia dura até 3 meses na geladeira.</p>

<p>Sim, o importante é usar as raspas e o suco de algum limão. Eu uso o siciliano por preferência pessoal.</p>

<p>Lemon Curd é um creme amanteigado, aveludado e doce, com intenso sabor ácido de limão, como uma versão cremosa de geleia de limão. O Lemon Curd é feito com ingredientes simples e fica pronto em menos de 10 minutos no fogão. Para quem ama limão, esse é o creme perfeito!</p>



<p>A historia do Lemon Curd começou no Reino Unido em meados do século 19, na época, ele era feito de uma maneira diferente, como uma coalhada mesmo (como o nome sugere), e prensado como recheio de tortas.</p>



<h2 class="wp-block-heading" id="aioseo-como">COMO FAZER LEMON CURD</h2>



<p>Você precisa de apenas 4 ingredientes para fazer Lemon Curd: gemas de ovos, açúcar, limão e manteiga. Cada um desses ingredientes tem uma função crucial na textura e sabor final do creme. As gemas são o agente gelificante, que dará toda a estrutura e firmeza ao creme, assim como elas fazer no Crème Pâtissière ou no Crème Anglaise. O limão siciliano dará todo o sabor, por isso nós usamos tanto o suco como o zest. O açúcar além de adoçar, ajudará na estrutura final. Já a manteiga, trará a cremosidade aveludada e o brilho final.</p>



<h2 class="wp-block-heading" id="aioseo-porque-meu-lemon-curd-tem-gosto-metalico">POR QUE SEU LEMON CURD TEM GOSTO METÁLICO OU SABOR FORTE A OVO?</h2>



<p>O ovo é composto básicamente por: água, proteína, gordura, vitaminas e minerais. Quando analisamos cientificamente a proteína do ovo, encontramos <strong>albumina</strong> (que é uma família de proteínas) e que possui <strong>cisteína</strong> (um aminoácido) na sua composição. <strong>Cisteína</strong> é um dos tipos de aminoácidos que possuem enxofre, logo, é dai que vem o famoso cheiro de enxofre.</p>



<p>A data de &#8220;fabricação&#8221; do ovo influencia diretamente no sabor final dele. A casca do ovo é porosa, à medida que o ovo envelhece, o dióxido de carbono vaza através dos poros da casca do ovo, tornando a clara do ovo menos ácida, fazendo com que ela fique mais líquida e perca seu papel estrutural. A porosidade também faz com que o ar entre no ovo, aumentando a câmara de gás dentro do ovo (por isso ovo velho boia). Um dos gases formados é o <strong>ácido sulfídrico</strong> (o cheiro de ovo podre).</p>



<h4 class="wp-block-heading" id="aioseo-entao-como-tudo-isso-influencia-no-gosto-e-cheiro"><strong>ENTÃO COMO TUDO ISSO INFLUENCIA NO GOSTO E CHEIRO?</strong></h4>



<p>Quando cozinhamos o ovo, com o calor, o <strong>ácido sulfídrico</strong> presente na clara reage com o ferro que há na gema, formando o <strong>sulfeto ferroso</strong>, que é o famoso cheiro de ovo cozido. Quanto mais calor, mais sulfeto é formado, e é ele que deixa aquele verde escuro entre a gema e a clara (por isso as pessoas acham que a culpa é da membrana da gema, e que coar vai ajudar).</p>



<p>Por isso, quanto mais velho o ovo, quando cozinharmos em uma receita, maior vai ser a chance de ficar com sabor metálico e cheiro de ovo. Então, cozinhe apenas o necessário e prefira usar ovos frescos de uma fonte confiável.</p>



<h2 class="wp-block-heading" id="aioseo-como-a-panela-pode-influenciar-no-lemon-curd">COMO A PANELA PODE INFLUENCIAR NO LEMON CURD</h2>



<p>A escolha da panela pode influenciar no cozimento do lemon curd e por fim, na textura e sabor final. Isso porque, como já vimos acima, se as gemas da receita forem expostas ao calor direto muito forte, o resultado final vai ser um lemon curd muito cozido, com cheiro a ovo e sabor metálico. </p>



<p>Eu prefiro utilizar panelas de fundo duplo (ou triplo), essas panelas geralmente tem uma distribuição de calor muito melhor e evitam que o calor seja direto no que cozinhamos. Outra opção para quem não possui uma panela de fundo duplo, é cozinhar o lemon curd no banho maria, já que ele não precisa atingir uma temperatura maior que 82-83ºC.</p>

<p>Você pode refrigerar o lemon curd por até 10 dias, sempre em um recipiente fechado com tampa. No congelador o lemon curd dura até 3 meses e na hora de usar, é só deixar um dia na geladeira para descongelar.</p>

<p><strong>POSSO USAR SUCO DE LIMÃO TAITI?</strong></p>



<p>Sim, você pode perfeitamente substituir o suco e raspas do limão siciliano por limão Taiti ou até outro cítrico da sua preferencia. Só precisa seguir o peso e tudo certo!</p>



<p><strong>POSSO USAR GEMA PASTEURIZADA?</strong></p>



<p>Pode, porém as gemas se pasteurizam quando levadas a uma temperatura de 70ºC por 1 minuto, então, nesse caso, se você utilizar um ovo fresco, seguir a receita e armazenar da maneira correta, as gemas vão cozinhar evitando qualquer perigo de contaminação.</p>



<p>Dito isso, algumas pessoas preferem ovo pasteurizado pelo fato da facilidade de armazenamento. </p>



<p><strong>PODE USAR MARGARINA NO LUGAR DA MANTEIGA?</strong></p>



<p>Não! Eu poderia abrir vários tópicos aqui contra a margarina, mas vou me manter apenas no principal: A margarina é feita a base de óleos vegetais e por isso ela se mantém cremosa, mesmo geladeira. A manteiga, como é feita de gordura animal, tem o poder de endurecer na geladeira. No lemon curd, a manteiga serve tanto para dar brilho, quanto em auxiliar na estrutura.</p>

<p>Talvez você já tenha provado o bolo de limão do Starbucks (que infelizmente já não podemos mais comer aqui no Brasil), e se você já provou, essa receita é o &#8220;copycat&#8221; perfeito para matar a saudades! Se você nunca provou, essa é a oportunidade para fazer um ainda melhor, e quando fizer me conta o que achou!</p>



<p>Eu sou realmente fã de bolinhos pra comer com um café, desses que você pode ter sempre! As crianças adoram (e não é aquela dose de açúcar exagerada), a gente mata aquela vontade de um docinho, e as visitas ficam impressionadas.</p>



<h2 class="wp-block-heading" id="aioseo-o-que-e-um-pound-cake">DIFERENÇA ENTRE LOAF CAKE E POUND CAKE</h2>



<p>O &#8220;Pound Cake&#8221; ou Bolo de Libra se traduzirmos ao português, é o nosso famoso Bolo Inglês, que na sua versão original, leva 1 pound (453gr) de cada um dos seguintes ingrediente: farinha, manteiga, açúcar e ovos. Sendo assim um bolo com proporção 1:1:1:1 que é assado em uma forma de pão retangular.</p>



<p>Já o &#8220;Loaf Cake&#8221; ou &#8220;Bolo de Pão&#8221;se traduzirmos ao português, é como o nome diz, um bolo assado em uma forma de pão. No caso do Loaf Cake, não é necessário seguir nenhuma proporção de ingredientes especifica. </p>

<h2 class="wp-block-heading" id="aioseo-que-forma-usar">SOBRE USAR FORMA DE PÃO</h2>



<p>Aqui no Brasil o mais comum é comprar/ter a forma de bolo inglês, que tem as paredes laterais em um ângulo mais aberto, deixando o bolo com uma base menor e um topo maior. Eu particularmente não gosto desse formato, por isso prefiro usar formas de pão, que são retangulares, retas e mais altas. Esteticamente falando, eu acho que o bolo fica muito mais bonito, mais alto, e a abertura central fica muito melhor.</p>

<h2 class="wp-block-heading" id="aioseo-como-tirar-zest-de-limao">COMO TIRAR ZEST DE LIMÃO</h2>



<p>Tirar zest (raspas) do limão é uma tarefa fácil, mas para não terminar com umas raspas grossas e amargas, é preciso utilizar a ferramenta certa! O famoso &#8220;Microplane&#8221;, que tem laminas afiadas e um ângulo perfeito que raspa apenas a parte amarela ou verde do limão, sem chegar na parte branca.</p>



<p>Eu já provei um zester da shopee que foi bem baratinho, e apesar de ter funcionado bem, para mim, o microplane é imbatível. Vou deixar <a href="https://a.co/d/iZ26nVA" target="_blank" rel="noopener" title="">um link aqui embaixo</a>, é só clicar na imagem.</p>

<p>É sempre importante ver o tipo de sal que é pedido nas receitas. Eu uso sempre sal de mar em cristais pequenos para a massa e flor de sal maldon para dar um toque especial por fora. Se você quiser usar sal fino para as preparações, ajuste a quantidade, já que o sal fino de mesa é mais salgado que os outros.</p>



<p>Temperaturas são medidas convencionais, porém cada forno é um forno, e muitas vezes a temperatura interna do forno não está 100% ajustada ao que diz no botão. Por isso, eu recomendo que você compre um termômetro de forno, assim você pode &#8220;descobrir&#8221; onde fica a &#8220;temperatura perfeita&#8221; no seu forno em particular. Geralmente fornos elétricos são mais precisos que fornos à gás, porém, com a temperatura ajustada e correta, você pode assar qualquer receita em qualquer forno.</p>



<h2 class="wp-block-heading" id="aioseo-porque-essa-receita-esta-em-gramas">PORQUE ESSA RECEITA ESTÁ EM GRAMAS?</h2>



<p>Eu faço todas as minhas receitas em gramas, já que é a maneira mais precisa de fazer confeitaria. Xícaras não são uma medida de precisão! A confeitaria é uma ciência e requer precisão. Medir uma receita em xícaras não te dará essa precisão e pode trazer resultados inconsistentes.&nbsp;</p>



<p>Existem muitas maneiras de encher uma xícara com farinha e é impossível garantir que a sua maneira será igual a minha. Sem mencionar que uma xícara no Brasil e uma xícara no resto do mundo tem capacidades diferentes. Dito isso, eu recomendo que você tenha a mãos uma balança de precisão, para poder reproduzir com exatidão todas as receitas.</p>
