<h2 class="wp-block-heading" id="aioseo-trufas-de-maracuja">TRUFAS DE MARACUJÁ</h2>



<p>Para mim, trufa de maracujá é um sabor que me traz uma memória afetiva com a época da páscoa, isso porque eu sempre lembro da época em que eu trabalhei como designer de jóias na Carla Amorim, e havia uma moça que vendia ovos recheados artesanais, meu favorito&#8230; o de maracujá!</p>



<p>Na época eu tinha conhecimentos muito básicos sobre confeitaria, e nunca entendia porque o ovo recheado dela durava tão pouco, mas sempre comprava porque adorava o saborzinho ácido do recheio de maracujá! </p>



<p>Hoje, com meu conhecimento, eu entendo que provavelmente, a formulação do recheio dela era bem básica, sem nenhum parâmetro! </p>



<p>No começo do ano me meti de cabeça nos estudos sobre ganaches, para tirar do papel um projeto que eu tinha há anos, e poder criar um excel de formulação de ganaches! Consegui e vim compartilhar a primeira receita com você! </p>

<h2 class="wp-block-heading" id="aioseo-ingredientes-e-suas-funcoes">INGREDIENTES DAS TRUFAS E SUAS FUNÇÕES</h2>



<p>Quando fazemos ganaches, trufas e bombons, é muito comum utilizarmos diferentes tipos de açúcares (como glucose, sorbitol e sacarose) ou de gorduras (como creme de leite, manteiga de cacau e manteiga). </p>



<p>Isso porque muitas vezes, esses ingredientes podem fazer com que o recheio tenha uma vida util maior, uma textura melhor e que o sabor seja muito superior!</p>



<p>Nessa receita, eu usei alguns desses ingredientes e deixa eu te explicar por que:</p>



<ul class="wp-block-list">
<li><strong>Chocolate Branco:</strong> é composto por uma parte de manteiga de cacau, uma parte de açúcar e uma parte de leite em pó. Perfeito para recheios em que não queremos sobressair o sabor do chocolate!</li>



<li><strong>Manteiga de Cacau:</strong> é uma gordura desodorizada, que tem um poder de endurecimento forte e seu ponto de derretimento é aos 35ºC, o que favorece para que o recheio tenha uma consistência dura.</li>



<li><strong>Creme de Leite:</strong> nesse caso, utilizamos o creme de leite tanto para textura, quanto para suavizar o sabor da polpa de maracujá (que é super potente).</li>



<li><strong>Polpa de Maracujá:</strong> é o que vai dar o sabor da trufa, é classificada como a porcentagem de água do recheio.</li>



<li><strong>Glucose:</strong> tem poder adoçante menos do que o açúcar (ou seja, não vai adoçar tanto) e ajuda na viscosidade, cremosidade e maciez da trufa.</li>



<li><strong>Ácido Citrico:</strong> ajuda a potencializar o toque ácido do maracujá, sem precisar adicionar água.</li>



<li><strong>Manteiga:</strong> é a responsável por suavizar a textura da trufa, já que seu ponto de fusão esta entre 20/30ºC.</li>
</ul>



<h2 class="wp-block-heading" id="aioseo-tudo-sobre-a-textura-da-trufa">TUDO SOBRE A TEXTURA DA TRUFA</h2>



<p>Para mim, a trufa precisa ter algumas características tanto estéticas quanto de textura.</p>



<ol class="wp-block-list">
<li><strong>Tamanho:</strong> a trufa precisa ter um tamanho que dé no mínimo para duas mordidas. Já provei fazer trufas de 10gr, porém, para mim, o tamanho ideal é de 15gr, que resulta em uma bolinha de aprox. 3cm de diâmetro.</li>



<li><strong>Banhado:</strong> a capa de chocolate da trufa precisa ser fina, delicada e de preferencia de um chocolate que converse com o sabor de dentro, sem sobressair e/ou roubar o sabor do recheio.</li>



<li><strong>Recheio Aerado:</strong> como você viu (ou vai ver) no video e na receita, eu gosto de bater o ganache da trufa com uma batedeira, para aerar levemente esse recheio. Isso porque eu sinto que a textura fica muito mais gostosa e untuosa na boca, e facilita na hora de bolear.</li>
</ol>

<h2 class="wp-block-heading" id="aioseo-como-armazenar-as-trufas">COMO ARMAZENAR AS TRUFAS</h2>



<p>Idealmente, tanto trufas como bombons, devem ser armazenado a uma temperatura entre 16/20ºC com um controle de umidade de aprox. 60%. Ou seja, uma adega de vinho seria o lugar ideal para armazenar esses produtos.</p>



<p>Dito isso, é obvio que nem todos temos essas facilidades na hora de armazenar as trufas, e também é obvio que não vamos deixar de produzir trufas por isso! </p>



<p>Minha recomendação então é armazenar as trufas na geladeira, em potes hermeticamente fechados, para que elas não absorvam umidade nem cheiros.</p>



<p>Se você vive em um lugar mais frio, onde as temperaturas variam no rango que eu coloquei aqui em cima, você pode perfeitamente armazenar as trufas a temperatura ambiente, devidamente fechadas.</p>



<h2 class="wp-block-heading" id="aioseo-vida-util-das-trufas">VIDA ÚTIL DAS TRUFAS</h2>



<p>A vida útil dos recheios, trufas e bombons depende 100% da porcentagem de água livre que esse recheio tem. Por isso, uma boa formulação é essencial para evitar recheios mofados em poucos dias!</p>



<p>Mas, o que significa a porcentagem de água livre? A água livre é calculada somando todos os ingredientes que contenham água na sua composição, como o creme de leite, a manteiga e a polpa de fruta!</p>



<p>Na formulação ideal, a porcentagem de água livre do recheio não deveria ultrapassar 20% da sua receita total.</p>



<p>Uma vez fabricadas da maneira correta, e armazenadas das maneiras corretas, essa trufa deveria durar <strong>mais de 4 semanas</strong>!</p>

<p>Fazia um bom tempo que eu estava com vontade de fazer um bolo de pistache, primeiro porque eu (diferente de vários chefs aqui) amo o sabor do pistache, e segundo porque eu queria muito fazer essa combinação de pistache com morango.</p>



<p>Esse é o tipo de bolo &#8220;simples&#8221; que fica chique e vai surpreender qualquer pessoa que provar. E vamos aproveitar que o Ano Novo está ai para investir ai um dinheirinho pra comprar a pasta e os pistaches pro bolo (hahahaha queria estar brincando).</p>

<h2 class="wp-block-heading" id="aioseo-preparar-a-forma-para-o-bolo">PREPARAR A FORMA PARA O BOLO</h2>



<p>Para essa receita eu utilizei uma forma redonda de 20cm. Você pode optar por usar uma forma um pouco maior, e a única diferença vai ser a altura.</p>



<p>Eu gosto de forrar o fundo e as laterais da forma com uma folha teflonada, ou um papel manteiga, que facilita muito na hora de desenformar. Você também pode untar a forma com manteiga e farinha, ou usar um spray.</p>



<p class="has-text-align-center has-background" style="background-color:#a8e6d687"><em>Eu sei que as gurus dos bolos falam pra não untar a forma, mas sinceramente, me da preguiça só de pensar depois em ficar raspando a forma pra soltar o bolo que vai ficar cheio de migalhas nas laterais.</em></p>



<h2 class="wp-block-heading" id="aioseo-como-conseguir-deixar-o-bolo-com-sabor-real-de-pistache">COMO CONSEGUIR DEIXAR O BOLO COM SABOR REAL DE PISTACHE</h2>



<p>Não tem muito segredo né&#8230; usando pistache! Nesse caso, para a massa do bolo, nós vamos moer o pistache cru com o açúcar e adicionar um pouco de pasta de pistache de boa qualidade (pasta e não creme hein).</p>



<p>É bom ficar sempre atento aos ingredientes que levam as pastas de pistache, e desconfiar sempre que uma pasta for muito baratinha! Pistache é um ingrediente caro, e uma boa pasta, deveria conter apenas pistache e corante, nada mais!</p>

<h2 class="wp-block-heading" id="aioseo-3-dicas-de-sucesso-para-o-chantilly-perfeito">3 DICAS DE SUCESSO</h2>



<ol class="wp-block-list">
<li><strong>Nivele seu bolo.</strong> Nivelar o bolo vai garantir que ele não desmorone depois de montado! Você pode usar o topo dele para comer com um cafe, ou para fazer uma farofinha e misturar com o pistache que vai decorar.</li>



<li><strong>Simplifique.</strong> Essa massa de bolo já é uma massa super úmida e o chantilly é super rico em sabor, não precisa se preocupar em molhar o bolo com alguma calda para montar, nem em fazer algum recheio extra. Não se complique mais do que o necessário! </li>



<li><strong>A geladeira é sua melhor aliada.</strong> Quando fazemos bolo com chantilly, a melhor maneira de prevenir um desastre de desmoronamento é manter o chantilly gelado e estável. Use a geladeira a seu favor e leve o bolo à geladeira sempre que julgar necessário.</li>
</ol>



<h2 class="wp-block-heading" id="aioseo-chantilly-de-chocolate-branco">CHANTILLY DE CHOCOLATE BRANCO</h2>



<p>Para o recheio e montagem do bolo, eu optei por fazer um chantilly de chocolate branco (ganache montado), que além de ser muito mais estável e resistente, traz outro nível de sabor ao bolo! Obvio que você pode optar por usar um chantilly simple, e vai ficar igualmente delicioso.</p>



<p>Para o ganache montado você vai precisar de: chocolate branco, baunilha (opcional) e creme de leite fresco (em duas adições). NADA MAIS! O único ponto negativo para esse chantilly é que ele precisa descansar/cristalizar por pelo menos 12h na geladeira.</p>

<p>Snickers é um dos meus docinhos industrializados preferidos, amo a combinação de amendoim, caramelo e chocolate! No snickers original tem também uma camada de torrone, mas acredite, depois que você provar a torta, não vai nem lembrar do torrone.</p>

<h2 class="wp-block-heading" id="aioseo-nota-sobre-sal-e-temperatura-de-forno">NOTA SOBRE SAL E TEMPERATURA DE FORNO</h2>



<p>É sempre importante ver o tipo de sal que é pedido nas receitas. Eu uso sempre sal de mar em cristais pequenos para a massa e flor de sal maldon para dar um toque especial por fora. Se você quiser usar sal fino para as preparações, ajuste a quantidade, já que o sal fino de mesa é mais salgado que os outros.</p>



<p>Temperaturas são medidas convencionais, porém cada forno é um forno, e muitas vezes a temperatura interna do forno não está 100% ajustada ao que diz no botão. Por isso, eu recomendo que você compre um termômetro de forno, assim você pode &#8220;descobrir&#8221; onde fica a &#8220;temperatura perfeita&#8221; no seu forno em particular. Geralmente fornos elétricos são mais precisos que fornos à gás, porém, com a temperatura ajustada e correta, você pode assar qualquer receita em qualquer forno.</p>

<p>Fomos passar uns dias em Campos do Jordão, para aproveitar a temporada de inverno e tirar as crianças de casa. Eu aproveitei a ocasião para fazer esse bolinho de chocolate que foi muito bem apreciado por todos, à beira da lareira e com climinha invernal!</p>



<p>Algumas ocasiões pedem receitas mais simples, que não precisem de muitos implementos ou muito tempo. Esse bolo de chocolate é perfeito pela sua simplicidade e fica ainda mais perfeito morno. Inclusive, no dia seguinte, eu fiz questão de colocá-lo 15 segundos no microondas para amornar antes de comer!</p>



<h2 class="wp-block-heading" id="aioseo-ingredientes-que-melhoram-o-bolo-de-chocolate">COMO POTENCIALIZAR O SABOR DO BOLO DE CHOCOLATE</h2>



<p>Alguns ingredientes podem potencializar e elevar o sabor de um simples bolo de chocolate.</p>



<ol class="wp-block-list">
<li><strong>Cacau em pó 100%</strong>: a escolha do cacau é muito importante, pois ele vai ditar o sabor à massa. Um bom cacau em pó é fundamental para ter um bolo saboroso. Usar chocolate em pó (que contém % de açúcar) pode alterar a textura do bolo.</li>



<li><strong>Café</strong>: muitas receitas, inclusive o famoso bolo peteleco, pedem por água quente, para fazer uma pastinha com o cacau. Eu uso sempre café coado no lugar da água, isso porque tanto o café como o cacau possuem substancias chamadas polifenóis, que interagem entre elas, fazendo com que o café amplifique seus sabores ricos e profundos, tornando-se mais achocolatado.</li>



<li><strong>Iogurte</strong> <strong>Natural</strong>: a acidez do iogurte vai reagir com o cacau e com o bicarbonato, deixando massa muito fofinha, esponjosa e leve. O iogurte também vai ajudar a manter a umidade da massa. </li>

<p>Não precisa de batedeira e fica pronto bem rapidinho! Essa massa precisa de pouquíssimo esforço para ficar perfeita, e foi por isso que eu escolhi ela para fazer na nossa viagem. Sem contar que você nem precisa se preocupar em encontrar uma forma perfeita, basta uma assadeira untada.</p>



<p>Você também pode assar essa massa em forminhas de cupcakes ou em uma (ou duas) formas redondas.</p>



<h2 class="wp-block-heading" id="aioseo-nota-sobre-sal-e-temperatura-de-forno">NOTA SOBRE SAL E TEMPERATURA DE FORNO</h2>



<p>É sempre importante ver o tipo de sal que é pedido nas receitas. Eu uso sempre sal de mar em cristais pequenos para a massa e flor de sal maldon para dar um toque especial por fora. Se você quiser usar sal fino para as preparações, ajuste a quantidade, já que o sal fino de mesa é mais salgado que os outros.</p>



<p>Temperaturas são medidas convencionais, porém cada forno é um forno, e muitas vezes a temperatura interna do forno não está 100% ajustada ao que diz no botão. Por isso, eu recomendo que você compre um termômetro de forno, assim você pode &#8220;descobrir&#8221; onde fica a &#8220;temperatura perfeita&#8221; no seu forno em particular. Geralmente fornos elétricos são mais precisos que fornos à gás, porém, com a temperatura ajustada e correta, você pode assar qualquer receita em qualquer forno.</p>

<h2 class="wp-block-heading" id="aioseo-cosmic-brownies">COSMIC BROWNIES</h2>



<p>Os &#8220;Cosmic Brownies&#8221; originais foram criados por uma empresa norte americana chamada Little Debbie e são a representação de snacks das crianças dos anos 90 de lá. Eles são a junção de um brownie fudge com um frosting cremoso de chocolate e confetes crocantes e coloridos por cima.</p>



<p>Recentemente os cosmic brownies viralizaram no TikTok e eu quis fazer a minha versão. Não sou a maior fã de &#8220;frostings&#8221; e achei que um bom ganache de corte ficaria perfeito para substituir&#8230; eu estava certa! Além de deixar o brownie menos enjoativo, ele dá uma cremosidade extra, que juro, fica PERFEITO! Outra coisa que eu tive que substituir foram os confetes, que usei os de chocolate que a gente encontra por aqui.</p>

<h2 class="wp-block-heading" id="aioseo-massa-de-brownie-sem-chocolate">MASSA DE BROWNIE SEM CHOCOLATE</h2>



<p>A massa desse brownie é diferente dos brownies que eu faço geralmente, não vai chocolate derretido, só cacau em pó mesmo. Também é por isso que essa massa leva um pouquinho de óleo, para compensar a gordura que tem no chocolate, e não deixar o brownie com uma textura seca e dura.</p>



<p>Essa foi a primeira vez que eu fiz brownie assim, e eu não vou mentir, eu tinha certo preconceito com massa de brownie sem chocolate, mas eu estava super errada, e não tenho vergonha de admitir! Achei a massa deliciosa, super saborosa e com a textura fudge perfeita, também achei que ficou menos doce e enjoativa, o que ajuda muito na hora de juntar com o ganache que é bem doce né. Com certeza vou usar essa base mais vezes!</p>



<p>O método de preparo é bem semelhante ao brownie normal, vou deixar aqui o video com o passo a passo.</p>

INGREDIENTES &#8211; 113g de manteiga &#8211; 60ml de óleo &#8211; 200gr de açúcar &#8211; 65gr de açúcar mascavo &#8211; 2 ovos &#8211; 1 gema &#8211; 1 colh. sopa de glucose (25g) &#8211; 1 colh. chá de baunilha &#8211; 65gr de cacau em pó &#8211; 110gr de farinha &#8211; 1/2 colh. chá de sal MÉTODO 1. Pré aquecer o forno a 180ºC e forrar uma fôrma quadrada de 21cm com papel manteiga. 2. Na batedeira, com o globo, bater os açúcares com os ovos e a glucose, até obter uma mistura aerada e esbranquiçada. 3. Adicionar o óleo, a manteiga derretida, a baunilha e misturar até incorporar. 4. Adicionar os secos (peneirar o cacau para evitar grumos) e misturar rapidamente, só até obter uma massa lisa e homogênea. 5. Espalhar a massa na fôrma e assar por aprox. 20min. Retirar do forno e deixar esfriar. 6. Espalhar o ganache de corte por cima do brownie e finalizar com os confeitos de chocolate coloridos. <p>O ganache que eu utilizei nessa receita é um tipo de ganache um pouco mais durinho, que chamamos de &#8220;ganache de corte&#8221;, justamente por ele ter uma textura fácil de cortar e que mantém a forma sem perder a maciez! </p>

<h2 class="wp-block-heading" id="aioseo-nota-sobre-sal-e-temperatura-de-forno">NOTA SOBRE SAL E TEMPERATURA DE FORNO</h2>



<p>&nbsp;sempre importante ver o tipo de sal que é pedido nas receitas. Eu uso sempre sal de mar em cristais pequenos para a massa e flor de sal maldon para dar um toque especial por fora. Se você quiser usar sal fino para as preparações, ajuste a quantidade, já que o sal fino de mesa é mais salgado que os outros.</p>



<p>Temperaturas são medidas convencionais, porém cada forno é um forno, e muitas vezes a temperatura interna do forno não está 100% ajustada ao que diz no botão. Por isso, eu recomendo que você compre um termômetro de forno, assim você pode &#8220;descobrir&#8221; onde fica a &#8220;temperatura perfeita&#8221; no seu forno em particular. Geralmente fornos elétricos são mais precisos que fornos à gás, porém, com a temperatura ajustada e correta, você pode assar qualquer receita em qualquer forno.</p>



<h2 class="wp-block-heading" id="aioseo-porque-essa-receita-esta-em-gramas">PORQUE ESSA RECEITA ESTÁ EM GRAMAS?</h2>



<p>Eu faço todas as minhas receitas em gramas, já que é a maneira mais precisa de fazer confeitaria. Xícaras não são uma medida de precisão! A confeitaria é uma ciência e requer precisão. Medir uma receita em xícaras não te dará essa precisão e pode trazer resultados inconsistentes. </p>



<p>Existem muitas maneiras de encher uma xícara com farinha e é impossível garantir que a sua maneira será igual a minha. Sem mencionar que uma xícara no Brasil e uma xícara no resto do mundo tem capacidades diferentes. Dito isso, eu recomendo que você tenha a mãos uma balança de precisão, para poder reproduzir com exatidão todas as receitas.</p>

<p>Sim, você pode fazer as duas coisas! Congelar por até 3 meses ou refrigerar por até 5 dias. Para descongelar, a recomendação é passar do freezer para a geladeira e deixar descongelar lentamente.</p>



<p><strong>POSSO SERVIR ESSE BROWNIE QUENTE?</strong></p>



<p>Olha, poder, você até pode, mas tem que ter em conta que ao esquentar, o ganache vai derreter e virar uma espécie de calda.</p>



<p><strong>POSSO USAR CHOCOLATE EM PÓ NO LUGAR DO CACAU 100%?</strong></p>



<p>Eu não recomendo, o chocolate em pó tem uma porcentagem de açúcar, que pode alterar a textura da massa e deixar mais doce também.</p>
