<p class="wp-block-paragraph">Com a chegada do friozinho, eu estava com muita vontade de preparar um cappuccino caseiro! Depois de tantos vídeos que apareceram para mim, resolvi fazer.</p>



<p class="wp-block-paragraph">Eu tinha uma receita básica, antiga, que não era ruim, mas também não era espetacular. Resolvi usar ela como base e fazer alterações até chegar em um resultado que eu amasse. E depois de 4 versões e muitos ajustes, cheguei no resultado que eu queria, um cappuccino cremoso, sedoso, saboroso e equilibrado!</p>



<h2 class="wp-block-heading" id="aioseo-5-motivos-para-preparar-esse-capuccino">5 MOTIVOS PARA PREPARAR ESSE CAPPUCCINO</h2>



<ol class="wp-block-list">
<li><strong>Feito com Chocolate: </strong>um dos pontos que eu queria mudar na minha receita original era adicionar o chocolate, que por conter gordura e açúcar, ajudaria na cremosidade, na consistência sedosa e também no dulçor.</li>



<li><strong>Equilíbrio:</strong> na receita, eu usei chocolate ao leite e meio amargo, justamente, para equilibrar o dulçor e manter a intensidade do sabor.</li>



<li><strong>Ovomaltine na Jogada:</strong> o ovomaltine contém uma quantidade importante de extrato de malte, que além de ter um sabor adocicado e delicioso, também ajuda na textura cremosa.</li>



<li><strong>Controle no Açúcar:</strong> uma característica importante dessa receita é a quantidade de açúcar, que foi minimamente calculada, para que no final, o cappuccino não ficasse enjoativo. A escolha pelo açúcar demerara é por seu sabor levemente caramelizado.</li>



<li><strong>Acidez controlada:</strong> o bicarbonato, entra na quantidade perfeita para neutralizar a acidez do café, sem adicionar sabor. Essa reação também faz com que o cappuccino crie uma espuma deliciosa.</li>

<p class="wp-block-paragraph">Entre o processo de ajuste da receita desse Cappuccino, eu fui pensando e anotando diversas ideias e variações que eu acho interessantes.</p>



<ul class="wp-block-list">
<li><strong> Adição de Especiarias:</strong> canela, noz moscada, baunilha, cardamomo. Tudo vai depender do seu gosto pessoal!</li>



<li><strong>Variação do Chocolate:</strong> na minha receita eu usei um mix entre ao leite e amargo, mas você pode alterar para o chocolate que preferir, deixando o cappuccino mais denso e amargo ou mais suave e doce.</li>



<li><strong>Versão Gelada:</strong> para o verão, bater o mix com leite e gelo, transformando totalmente essa preparação clássica, em um ótimo Frappuccino!</li>



<li><strong>Potinhos para Presentear:</strong> uma ideia excelente para quem busca opções de presente acessíveis e que tragam uma historia, um carinho e conforto. Embalar em potinhos de vidro deixa qualquer preparação charmosa para presentear.</li>
</ul>

<p class="wp-block-paragraph">A combinação de pistache com chocolate sempre foi das minhas favoritas e fazia tempo que eu estava com essa receita arquivada para fazer. Agora que eu fiz, fiquei pensando porque não tinha feito antes… hahaha ficou MUITO BOM!</p>



<p class="wp-block-paragraph">Para esse Brownie, nós vamos usar o <a href="https://www.thinkingsweet.com/2024/07/29/creme-de-pistache/" target="_blank" rel="noopener" title="Creme de Pistache">Creme de Pistache</a> que eu já ensinei aqui, mas você também pode comprar se preferir. Outra dica é usar um chocolate de qualidade, assim o sabor do brownie vai estar garantido!</p>



<h2 class="wp-block-heading" id="aioseo-como-saber-quando-o-brownie-esta-pronto">COMO SABER QUANDO O BROWNIE ESTÁ PRONTO?</h2>



<p class="wp-block-paragraph">As vezes é difícil saber quando o Brownie já está pronto, e muitas vezes, as pessoas cozinham demais o brownie, com medo dele ficar cru. Por isso, muitas pessoas reclamam sobre o brownie ter ficado seco. Em 90% das vezes, a culpa não é da massa, e sim, do tempo de cocção.</p>



<p class="wp-block-paragraph">Para determinar quando o brownie já está pronto (além de seguir o tempo descrito na receita), podemos nos guiar por dois fatores:</p>



<ul class="wp-block-list">
<li><strong>Cheiro cativante de chocolate na casa toda</strong>: Não tem erro, quando começamos a sentir aquele cheiro delicioso de chocolate na casa toda, é porque o brownie já está ficando pronto!</li>



<li><strong>Laterais mais altas e casquinha quebradiça</strong>: Outra boa maneira de identificar se o brownie esta pronto, é observar que as laterais estejam levemente mais altas que o centro, e toda a superfície do brownie esteja com a típica casquinha quebradiça, sem aspecto de que o centro esteja crú.</li>



<li><strong>Teste do palito</strong>: Definitivamente é o meu menos favorito, porém é útil para quem está começando, ou se sente mais inseguro. Quando colocamos o palito na massa, ele não pode sair com a massa crua, ele deve sair úmido e com pedaços de massa.</li>

<h2 class="wp-block-heading" id="aioseo-como-conseguir-aquela-casquinha-brilhante-e-quebradica-por-cima">COMO CONSEGUIR AQUELA CASQUINHA BRILHANTE E QUEBRADIÇA DO BROWNIE</h2>



<p class="wp-block-paragraph">Não tem nada mais satisfatório que ver o brownie saindo do forno com aquela casquinha brilhante e quebradiça, que também é deliciosa! Porém, essa casquinha é uma reação química que depende de alguns fatores na hora em que produzimos e assamos a massa:</p>



<ol class="wp-block-list">
<li><strong>Bater os ovos com o açúcar até esranquiçar</strong>: Ao bater os ovos com o açúcar até obter uma mistura aerada e esbranquiçada, o açúcar vai se dissolver, resultando em uma mistura brilhante. A dissolução do açúcar vai contribuir com a caramelização ao assar.</li>



<li><strong>Caramelização do açúcar</strong>: Quando o açúcar presente na massa (e previamente dissolvido nos ovos) é exposto ao calor do forno, ele carameliza, o que ajuda na formação da crosta brilhante.</li>



<li><strong>Reação de Maillard</strong>: Essa reação entre aminoácidos e açúcares, que ocorre durante o cozimento, ajuda a criar a crosta dourada e complexa na superfície do brownie.</li>
</ol>



<h2 class="wp-block-heading" id="aioseo-nota-sobre-sal-e-temperatura-de-forno">NOTA SOBRE SAL E TEMPERATURA DE FORNO</h2>



<p class="wp-block-paragraph">É sempre importante ver o tipo de sal que é pedido nas receitas. Eu uso sempre sal de mar em cristais pequenos para a massa e flor de sal maldon para dar um toque especial por fora. Se você quiser usar sal fino para as preparações, ajuste a quantidade, já que o sal fino de mesa é mais salgado que os outros.</p>



<p class="wp-block-paragraph">Temperaturas são medidas convencionais, porém cada forno é um forno, e muitas vezes a temperatura interna do forno não está 100% ajustada ao que diz no botão. Por isso, eu recomendo que você compre um termômetro de forno, assim você pode &#8220;descobrir&#8221; onde fica a &#8220;temperatura perfeita&#8221; no seu forno em particular. Geralmente fornos elétricos são mais precisos que fornos à gás, porém, com a temperatura ajustada e correta, você pode assar qualquer receita em qualquer forno.</p>

<p class="wp-block-paragraph">Sim! Depois que esfriar você pode congelar os brownies por até 3 meses. Antes de servir, deixe na geladeira para descongelar e na hora que for servir aqueça os brownies por alguns segundos no microondas, assim eles ficarão como recém assados!</p>



<p class="wp-block-paragraph"><strong>COMO ARMAZENAR OS BROWNIES?</strong></p>



<p class="wp-block-paragraph">Eu gosto de armazenar os brownies em temperatura ambiente, bem fechados em um recipiente, ou com plástico filme. Em temperatura ambiente teles duram até 7 dias. Você também pode armazenar na geladeira, por até 10 dias.</p>

<p class="wp-block-paragraph">Fomos passar uns dias em Campos do Jordão, para aproveitar a temporada de inverno e tirar as crianças de casa. Eu aproveitei a ocasião para fazer esse bolinho de chocolate que foi muito bem apreciado por todos, à beira da lareira e com climinha invernal!</p>



<p class="wp-block-paragraph">Algumas ocasiões pedem receitas mais simples, que não precisem de muitos implementos ou muito tempo. Esse bolo de chocolate é perfeito pela sua simplicidade e fica ainda mais perfeito morno. Inclusive, no dia seguinte, eu fiz questão de colocá-lo 15 segundos no microondas para amornar antes de comer!</p>



<h2 class="wp-block-heading" id="aioseo-ingredientes-que-melhoram-o-bolo-de-chocolate">COMO POTENCIALIZAR O SABOR DO BOLO DE CHOCOLATE</h2>



<p class="wp-block-paragraph">Alguns ingredientes podem potencializar e elevar o sabor de um simples bolo de chocolate.</p>



<ol class="wp-block-list">
<li><strong>Cacau em pó 100%</strong>: a escolha do cacau é muito importante, pois ele vai ditar o sabor à massa. Um bom cacau em pó é fundamental para ter um bolo saboroso. Usar chocolate em pó (que contém % de açúcar) pode alterar a textura do bolo.</li>



<li><strong>Café</strong>: muitas receitas, inclusive o famoso bolo peteleco, pedem por água quente, para fazer uma pastinha com o cacau. Eu uso sempre café coado no lugar da água, isso porque tanto o café como o cacau possuem substancias chamadas polifenóis, que interagem entre elas, fazendo com que o café amplifique seus sabores ricos e profundos, tornando-se mais achocolatado.</li>



<li><strong>Iogurte</strong> <strong>Natural</strong>: a acidez do iogurte vai reagir com o cacau e com o bicarbonato, deixando massa muito fofinha, esponjosa e leve. O iogurte também vai ajudar a manter a umidade da massa. </li>

<p class="wp-block-paragraph">Não precisa de batedeira e fica pronto bem rapidinho! Essa massa precisa de pouquíssimo esforço para ficar perfeita, e foi por isso que eu escolhi ela para fazer na nossa viagem. Sem contar que você nem precisa se preocupar em encontrar uma forma perfeita, basta uma assadeira untada.</p>



<p class="wp-block-paragraph">Você também pode assar essa massa em forminhas de cupcakes ou em uma (ou duas) formas redondas.</p>



<h2 class="wp-block-heading" id="aioseo-nota-sobre-sal-e-temperatura-de-forno">NOTA SOBRE SAL E TEMPERATURA DE FORNO</h2>



<p class="wp-block-paragraph">É sempre importante ver o tipo de sal que é pedido nas receitas. Eu uso sempre sal de mar em cristais pequenos para a massa e flor de sal maldon para dar um toque especial por fora. Se você quiser usar sal fino para as preparações, ajuste a quantidade, já que o sal fino de mesa é mais salgado que os outros.</p>



<p class="wp-block-paragraph">Temperaturas são medidas convencionais, porém cada forno é um forno, e muitas vezes a temperatura interna do forno não está 100% ajustada ao que diz no botão. Por isso, eu recomendo que você compre um termômetro de forno, assim você pode &#8220;descobrir&#8221; onde fica a &#8220;temperatura perfeita&#8221; no seu forno em particular. Geralmente fornos elétricos são mais precisos que fornos à gás, porém, com a temperatura ajustada e correta, você pode assar qualquer receita em qualquer forno.</p>

<p class="wp-block-paragraph">Essa receita de muffins de chocolate é de longe minha favorita, fácil de fazer, fica pronta rápido e é carregada de chocolate (que eu amo)!</p>



<p class="wp-block-paragraph">Diferente de um bolo de chocolate, esse muffin não tem aquela textura esponjosa e levinha, ele tem uma textura mais densa e indulgente, isso acontece porque não adicionamos água quente na massa.</p>



<p class="wp-block-paragraph">Outro ponto a favor é que o muffin não precisa de nenhum equipamento como batedeira ou mixer. A massa é simples e com ingredientes fáceis de encontrar.</p>



<h2 class="wp-block-heading" id="aioseo-qual-a-diferenca-entre-muffin-e-cupcake">QUAL A DIFERENÇA ENTRE MUFFIN E CUPCAKE?</h2>



<p class="wp-block-paragraph">Na minha opinião, os muffins são mini versões de bolos mais densos e simples, como o Banana Bread. Eles levam uma quantidade maior de agentes levedantes (fermento e bicarbonato) e são mais simples de fazer, na maioria das vezes é só misturar tudo em um bowl, sem precisar de batedeira.</p>



<p class="wp-block-paragraph">Já os Cupcakes, são mini bolos mais elaborados, geralmente com um massa amanteigada que precisa ser aerada. Eles também são muito vezes recheados e recebem uma camada de frosting decorando por cima.</p>



<p class="wp-block-paragraph">Outra diferença para mim é o tamanho, eu gosto de fazer os muffins mais altos.</p>

<h2 class="wp-block-heading" id="aioseo-chocolate-picado-ou-chips">CHOCOLATE PICADO OU CHIPS?</h2>



<p class="wp-block-paragraph">O chocolate em calets (aqueles chips redondinhos) que é o formato mais utilizado na industria (e aqui estou falando de chocolate nobre) é ótimo para diversas preparações e é fácil de derreter, porém, para cookies e muffins, eu prefiro usar chocolate picado.</p>



<p class="wp-block-paragraph">Quando picamos o chocolate, ele acaba ficando com tamanhos irregulares, que farão com que a massa final fique com diferentes “poças” de chocolate derretido, umas maiores e outras menores. O chocolate quando picado também solta um pózinho na tábua, que quando adicionado à massa, vai deixá-la com um sabor extra a chocolate.</p>



<p class="wp-block-paragraph">Claro que tudo isso vem de um ponto de vista e preferência pessoal, no final do dia, você usa o chocolate que para você for melhor e mais fácil. Me conta nos comentários qual a sua opinião.</p>

<p class="wp-block-paragraph"><strong>POSSO USAR CHOCOLATE AMARGO NO LUGAR DO AO LEITE?</strong></p>



<p class="wp-block-paragraph">Sim, você pode usar o chocolate que quiser, pode inclusive fazer um mix e usar metade amargo e metade ao leite. Eu uso ao leite porque sinto que da um contraste gostoso com a massa que não é tão doce.</p>
