<h2 class="wp-block-heading" id="aioseo-trufas-de-maracuja">TRUFAS DE MARACUJÁ</h2>



<p>Para mim, trufa de maracujá é um sabor que me traz uma memória afetiva com a época da páscoa, isso porque eu sempre lembro da época em que eu trabalhei como designer de jóias na Carla Amorim, e havia uma moça que vendia ovos recheados artesanais, meu favorito&#8230; o de maracujá!</p>



<p>Na época eu tinha conhecimentos muito básicos sobre confeitaria, e nunca entendia porque o ovo recheado dela durava tão pouco, mas sempre comprava porque adorava o saborzinho ácido do recheio de maracujá! </p>



<p>Hoje, com meu conhecimento, eu entendo que provavelmente, a formulação do recheio dela era bem básica, sem nenhum parâmetro! </p>



<p>No começo do ano me meti de cabeça nos estudos sobre ganaches, para tirar do papel um projeto que eu tinha há anos, e poder criar um excel de formulação de ganaches! Consegui e vim compartilhar a primeira receita com você! </p>

<h2 class="wp-block-heading" id="aioseo-ingredientes-e-suas-funcoes">INGREDIENTES DAS TRUFAS E SUAS FUNÇÕES</h2>



<p>Quando fazemos ganaches, trufas e bombons, é muito comum utilizarmos diferentes tipos de açúcares (como glucose, sorbitol e sacarose) ou de gorduras (como creme de leite, manteiga de cacau e manteiga). </p>



<p>Isso porque muitas vezes, esses ingredientes podem fazer com que o recheio tenha uma vida util maior, uma textura melhor e que o sabor seja muito superior!</p>



<p>Nessa receita, eu usei alguns desses ingredientes e deixa eu te explicar por que:</p>



<ul class="wp-block-list">
<li><strong>Chocolate Branco:</strong> é composto por uma parte de manteiga de cacau, uma parte de açúcar e uma parte de leite em pó. Perfeito para recheios em que não queremos sobressair o sabor do chocolate!</li>



<li><strong>Manteiga de Cacau:</strong> é uma gordura desodorizada, que tem um poder de endurecimento forte e seu ponto de derretimento é aos 35ºC, o que favorece para que o recheio tenha uma consistência dura.</li>



<li><strong>Creme de Leite:</strong> nesse caso, utilizamos o creme de leite tanto para textura, quanto para suavizar o sabor da polpa de maracujá (que é super potente).</li>



<li><strong>Polpa de Maracujá:</strong> é o que vai dar o sabor da trufa, é classificada como a porcentagem de água do recheio.</li>



<li><strong>Glucose:</strong> tem poder adoçante menos do que o açúcar (ou seja, não vai adoçar tanto) e ajuda na viscosidade, cremosidade e maciez da trufa.</li>



<li><strong>Ácido Citrico:</strong> ajuda a potencializar o toque ácido do maracujá, sem precisar adicionar água.</li>



<li><strong>Manteiga:</strong> é a responsável por suavizar a textura da trufa, já que seu ponto de fusão esta entre 20/30ºC.</li>
</ul>



<h2 class="wp-block-heading" id="aioseo-tudo-sobre-a-textura-da-trufa">TUDO SOBRE A TEXTURA DA TRUFA</h2>



<p>Para mim, a trufa precisa ter algumas características tanto estéticas quanto de textura.</p>



<ol class="wp-block-list">
<li><strong>Tamanho:</strong> a trufa precisa ter um tamanho que dé no mínimo para duas mordidas. Já provei fazer trufas de 10gr, porém, para mim, o tamanho ideal é de 15gr, que resulta em uma bolinha de aprox. 3cm de diâmetro.</li>



<li><strong>Banhado:</strong> a capa de chocolate da trufa precisa ser fina, delicada e de preferencia de um chocolate que converse com o sabor de dentro, sem sobressair e/ou roubar o sabor do recheio.</li>



<li><strong>Recheio Aerado:</strong> como você viu (ou vai ver) no video e na receita, eu gosto de bater o ganache da trufa com uma batedeira, para aerar levemente esse recheio. Isso porque eu sinto que a textura fica muito mais gostosa e untuosa na boca, e facilita na hora de bolear.</li>
</ol>

<h2 class="wp-block-heading" id="aioseo-como-armazenar-as-trufas">COMO ARMAZENAR AS TRUFAS</h2>



<p>Idealmente, tanto trufas como bombons, devem ser armazenado a uma temperatura entre 16/20ºC com um controle de umidade de aprox. 60%. Ou seja, uma adega de vinho seria o lugar ideal para armazenar esses produtos.</p>



<p>Dito isso, é obvio que nem todos temos essas facilidades na hora de armazenar as trufas, e também é obvio que não vamos deixar de produzir trufas por isso! </p>



<p>Minha recomendação então é armazenar as trufas na geladeira, em potes hermeticamente fechados, para que elas não absorvam umidade nem cheiros.</p>



<p>Se você vive em um lugar mais frio, onde as temperaturas variam no rango que eu coloquei aqui em cima, você pode perfeitamente armazenar as trufas a temperatura ambiente, devidamente fechadas.</p>



<h2 class="wp-block-heading" id="aioseo-vida-util-das-trufas">VIDA ÚTIL DAS TRUFAS</h2>



<p>A vida útil dos recheios, trufas e bombons depende 100% da porcentagem de água livre que esse recheio tem. Por isso, uma boa formulação é essencial para evitar recheios mofados em poucos dias!</p>



<p>Mas, o que significa a porcentagem de água livre? A água livre é calculada somando todos os ingredientes que contenham água na sua composição, como o creme de leite, a manteiga e a polpa de fruta!</p>



<p>Na formulação ideal, a porcentagem de água livre do recheio não deveria ultrapassar 20% da sua receita total.</p>



<p>Uma vez fabricadas da maneira correta, e armazenadas das maneiras corretas, essa trufa deveria durar <strong>mais de 4 semanas</strong>!</p>
