<p class="wp-block-paragraph">Fazia um bom tempo que eu estava com vontade de fazer um bolo de pistache, primeiro porque eu (diferente de vários chefs aqui) amo o sabor do pistache, e segundo porque eu queria muito fazer essa combinação de pistache com morango.</p>



<p class="wp-block-paragraph">Esse é o tipo de bolo &#8220;simples&#8221; que fica chique e vai surpreender qualquer pessoa que provar. E vamos aproveitar que o Ano Novo está ai para investir ai um dinheirinho pra comprar a pasta e os pistaches pro bolo (hahahaha queria estar brincando).</p>

<h2 class="wp-block-heading" id="aioseo-preparar-a-forma-para-o-bolo">PREPARAR A FORMA PARA O BOLO</h2>



<p class="wp-block-paragraph">Para essa receita eu utilizei uma forma redonda de 20cm. Você pode optar por usar uma forma um pouco maior, e a única diferença vai ser a altura.</p>



<p class="wp-block-paragraph">Eu gosto de forrar o fundo e as laterais da forma com uma folha teflonada, ou um papel manteiga, que facilita muito na hora de desenformar. Você também pode untar a forma com manteiga e farinha, ou usar um spray.</p>



<p class="has-text-align-center has-background wp-block-paragraph" style="background-color:#a8e6d687"><em>Eu sei que as gurus dos bolos falam pra não untar a forma, mas sinceramente, me da preguiça só de pensar depois em ficar raspando a forma pra soltar o bolo que vai ficar cheio de migalhas nas laterais.</em></p>



<h2 class="wp-block-heading" id="aioseo-como-conseguir-deixar-o-bolo-com-sabor-real-de-pistache">COMO CONSEGUIR DEIXAR O BOLO COM SABOR REAL DE PISTACHE</h2>



<p class="wp-block-paragraph">Não tem muito segredo né&#8230; usando pistache! Nesse caso, para a massa do bolo, nós vamos moer o pistache cru com o açúcar e adicionar um pouco de pasta de pistache de boa qualidade (pasta e não creme hein).</p>



<p class="wp-block-paragraph">É bom ficar sempre atento aos ingredientes que levam as pastas de pistache, e desconfiar sempre que uma pasta for muito baratinha! Pistache é um ingrediente caro, e uma boa pasta, deveria conter apenas pistache e corante, nada mais!</p>

<h2 class="wp-block-heading" id="aioseo-3-dicas-de-sucesso-para-o-chantilly-perfeito">3 DICAS DE SUCESSO</h2>



<ol class="wp-block-list">
<li><strong>Nivele seu bolo.</strong> Nivelar o bolo vai garantir que ele não desmorone depois de montado! Você pode usar o topo dele para comer com um cafe, ou para fazer uma farofinha e misturar com o pistache que vai decorar.</li>



<li><strong>Simplifique.</strong> Essa massa de bolo já é uma massa super úmida e o chantilly é super rico em sabor, não precisa se preocupar em molhar o bolo com alguma calda para montar, nem em fazer algum recheio extra. Não se complique mais do que o necessário! </li>



<li><strong>A geladeira é sua melhor aliada.</strong> Quando fazemos bolo com chantilly, a melhor maneira de prevenir um desastre de desmoronamento é manter o chantilly gelado e estável. Use a geladeira a seu favor e leve o bolo à geladeira sempre que julgar necessário.</li>
</ol>



<h2 class="wp-block-heading" id="aioseo-chantilly-de-chocolate-branco">CHANTILLY DE CHOCOLATE BRANCO</h2>



<p class="wp-block-paragraph">Para o recheio e montagem do bolo, eu optei por fazer um chantilly de chocolate branco (ganache montado), que além de ser muito mais estável e resistente, traz outro nível de sabor ao bolo! Obvio que você pode optar por usar um chantilly simple, e vai ficar igualmente delicioso.</p>



<p class="wp-block-paragraph">Para o ganache montado você vai precisar de: chocolate branco, baunilha (opcional) e creme de leite fresco (em duas adições). NADA MAIS! O único ponto negativo para esse chantilly é que ele precisa descansar/cristalizar por pelo menos 12h na geladeira.</p>

<p class="wp-block-paragraph">A combinação de pistache com chocolate sempre foi das minhas favoritas e fazia tempo que eu estava com essa receita arquivada para fazer. Agora que eu fiz, fiquei pensando porque não tinha feito antes… hahaha ficou MUITO BOM!</p>



<p class="wp-block-paragraph">Para esse Brownie, nós vamos usar o <a href="https://www.thinkingsweet.com/2024/07/29/creme-de-pistache/" target="_blank" rel="noopener" title="Creme de Pistache">Creme de Pistache</a> que eu já ensinei aqui, mas você também pode comprar se preferir. Outra dica é usar um chocolate de qualidade, assim o sabor do brownie vai estar garantido!</p>



<h2 class="wp-block-heading" id="aioseo-como-saber-quando-o-brownie-esta-pronto">COMO SABER QUANDO O BROWNIE ESTÁ PRONTO?</h2>



<p class="wp-block-paragraph">As vezes é difícil saber quando o Brownie já está pronto, e muitas vezes, as pessoas cozinham demais o brownie, com medo dele ficar cru. Por isso, muitas pessoas reclamam sobre o brownie ter ficado seco. Em 90% das vezes, a culpa não é da massa, e sim, do tempo de cocção.</p>



<p class="wp-block-paragraph">Para determinar quando o brownie já está pronto (além de seguir o tempo descrito na receita), podemos nos guiar por dois fatores:</p>



<ul class="wp-block-list">
<li><strong>Cheiro cativante de chocolate na casa toda</strong>: Não tem erro, quando começamos a sentir aquele cheiro delicioso de chocolate na casa toda, é porque o brownie já está ficando pronto!</li>



<li><strong>Laterais mais altas e casquinha quebradiça</strong>: Outra boa maneira de identificar se o brownie esta pronto, é observar que as laterais estejam levemente mais altas que o centro, e toda a superfície do brownie esteja com a típica casquinha quebradiça, sem aspecto de que o centro esteja crú.</li>



<li><strong>Teste do palito</strong>: Definitivamente é o meu menos favorito, porém é útil para quem está começando, ou se sente mais inseguro. Quando colocamos o palito na massa, ele não pode sair com a massa crua, ele deve sair úmido e com pedaços de massa.</li>

<h2 class="wp-block-heading" id="aioseo-como-conseguir-aquela-casquinha-brilhante-e-quebradica-por-cima">COMO CONSEGUIR AQUELA CASQUINHA BRILHANTE E QUEBRADIÇA DO BROWNIE</h2>



<p class="wp-block-paragraph">Não tem nada mais satisfatório que ver o brownie saindo do forno com aquela casquinha brilhante e quebradiça, que também é deliciosa! Porém, essa casquinha é uma reação química que depende de alguns fatores na hora em que produzimos e assamos a massa:</p>



<ol class="wp-block-list">
<li><strong>Bater os ovos com o açúcar até esranquiçar</strong>: Ao bater os ovos com o açúcar até obter uma mistura aerada e esbranquiçada, o açúcar vai se dissolver, resultando em uma mistura brilhante. A dissolução do açúcar vai contribuir com a caramelização ao assar.</li>



<li><strong>Caramelização do açúcar</strong>: Quando o açúcar presente na massa (e previamente dissolvido nos ovos) é exposto ao calor do forno, ele carameliza, o que ajuda na formação da crosta brilhante.</li>



<li><strong>Reação de Maillard</strong>: Essa reação entre aminoácidos e açúcares, que ocorre durante o cozimento, ajuda a criar a crosta dourada e complexa na superfície do brownie.</li>
</ol>



<h2 class="wp-block-heading" id="aioseo-nota-sobre-sal-e-temperatura-de-forno">NOTA SOBRE SAL E TEMPERATURA DE FORNO</h2>



<p class="wp-block-paragraph">É sempre importante ver o tipo de sal que é pedido nas receitas. Eu uso sempre sal de mar em cristais pequenos para a massa e flor de sal maldon para dar um toque especial por fora. Se você quiser usar sal fino para as preparações, ajuste a quantidade, já que o sal fino de mesa é mais salgado que os outros.</p>



<p class="wp-block-paragraph">Temperaturas são medidas convencionais, porém cada forno é um forno, e muitas vezes a temperatura interna do forno não está 100% ajustada ao que diz no botão. Por isso, eu recomendo que você compre um termômetro de forno, assim você pode &#8220;descobrir&#8221; onde fica a &#8220;temperatura perfeita&#8221; no seu forno em particular. Geralmente fornos elétricos são mais precisos que fornos à gás, porém, com a temperatura ajustada e correta, você pode assar qualquer receita em qualquer forno.</p>

<p class="wp-block-paragraph">Sim! Depois que esfriar você pode congelar os brownies por até 3 meses. Antes de servir, deixe na geladeira para descongelar e na hora que for servir aqueça os brownies por alguns segundos no microondas, assim eles ficarão como recém assados!</p>



<p class="wp-block-paragraph"><strong>COMO ARMAZENAR OS BROWNIES?</strong></p>



<p class="wp-block-paragraph">Eu gosto de armazenar os brownies em temperatura ambiente, bem fechados em um recipiente, ou com plástico filme. Em temperatura ambiente teles duram até 7 dias. Você também pode armazenar na geladeira, por até 10 dias.</p>

<p class="wp-block-paragraph">A gente está sempre tão acostumado com Nutella (que é tipo uma gianduia), que não pensamos muito na existência de outros sabores de “duias” como é o caso desse creme de pistache delicioso!</p>



<p class="wp-block-paragraph">Eu estava com muita vontade de fazer um Brownie de Chocolate com Pistache, então resolvi usar um creme de pistache ao invés de usar praline, assim eu podia vir aqui compartilhar essa receita e desbloquear essa nova necessidade na sua vida.</p>



<h2 class="wp-block-heading" id="aioseo-diferenca-entre-creme-e-pasta-de-pistache">DIFERENÇA ENTRE CREME E PASTA DE PISTACHE</h2>



<p class="wp-block-paragraph">Fiz uma enquete no<a href="https://www.instagram.com/carolinalabaki" target="_blank" rel="noopener" title=" meu intagram"> meu intagram</a> e vi que a maioria das pessoas não sabia a diferença entre creme e pasta de pistache, e muitos achavam que era tudo a mesma coisa. Não é!</p>



<p class="wp-block-paragraph">Pasta de Pistache é (idealmente) uma pasta que contém apenas pistache e no máximo corante verde. Muitas pastas porém, contém outros componentes como óleos vegetais, essências e amêndoas, que ajudam a baratear o produto final, já que pistache é caro.</p>



<p class="wp-block-paragraph">Eu particularmente não gosto do sabor dessas pastas mais baratas, isso porque elas tem um sabor essencial muito forte, que deixa tudo com sabor a amêndoas e não tem nada a ver com o sabor real do pistache!</p>



<p class="wp-block-paragraph">Já o Creme de Pistache, é um preparado que além de conter pistache (ou pasta de pistache), também contém outros ingredientes como leite, manteiga, chocolate branco e açúcar. O creme é perfeito para utilizar diretamente, como recheio por exemplo. </p>

<p class="wp-block-paragraph">Eu particularmente nunca provei essa receita com chocolate fracionado ou cobertura. Sempre que faço, utilizo chocolate de boa qualidade,  isso porque, precisamos do poder de cristalização da manteiga de cacau (que esta no chocolate), para cristalizar o creme e deixá-lo com uma textura cremosa e não liquida.</p>

<p class="wp-block-paragraph">Esse cookie está 100% inspirado nas criações do Chef francês Cedric Grolet, que viraliza com qualquer receita que ele faça! Retirei uma receita de cookie do livro &#8220;Frutas&#8221; dele e adaptei para fazer a versão de Pistache. O resultado ficou fenomenal, saboroso e bem pistachudo!</p>



<p class="wp-block-paragraph">Acho que a dica mais importante que eu posso te dar aqui é usar um bom pistache e uma boa pasta de pistache, isso é o que vai marcar a diferença entre um cookie perfeito ou um cookie mais ou menos. Lembre-se que uma boa pasta de pistache não deveria ter nada além de pistache (e talvez corante verde). Eu recomendo que você leia o post com calma e prepare seu caramelo com antecedência, para poder esfriar e estar prontinho para usar na hora de fazer o cookie.</p>

<p class="wp-block-paragraph">Outra decoração que eu utilizo nesse cookie, e que ajuda a dar uma crocância muito especial é o Pistache caramelizado, que além de muito simples de fazer, fica delicioso e pode ser utilizado em milhões de outras preparações.</p>



<h3 class="wp-block-heading" id="aioseo-como-fazer-pistache-caramelizado">COMO FAZER PISTACHE CARAMELIZADO</h3>



<p class="wp-block-paragraph">Para fazer os pistaches caramelizados você vai precisar apenas de:<br>&#8211; 100g de açúcar&nbsp;<br>&#8211; 100g de pistache</p>



<p class="wp-block-paragraph">1. Em uma panela, a fogo médio, derreter o açúcar.<br>2. Adicionar os pistaches e mexer para cobrir todos os pistaches com o caramelo.<br>3. Transferir para um silpat ou papel manteiga e deixar esfriar.<br>4. Soltar os pistaches, ou picar (dependendo do uso).</p>

<p class="wp-block-paragraph">Para simplificar o praliné de pistache, você pode bater o mesmo pistache caramelizado em uma processadora, até obter uma pasta. Assim você terá um praliné 50/50 de açúcar e pistache.</p>



<p class="wp-block-paragraph">Se quiser se aventurar no mundo dos pralinés, você pode explorar as porcentagens entre açúcar e pistache. Eu gosto muito de fazer 60% pistache e 40% açúcar.</p>

<p class="wp-block-paragraph">É sempre importante ver o tipo de sal que é pedido nas receitas. Eu uso sempre sal de mar em cristais pequenos para a massa e flor de sal maldon para dar um toque especial por fora. Se você quiser usar sal fino para as preparações, ajuste a quantidade, já que o sal fino de mesa é mais salgado que os outros.</p>



<p class="wp-block-paragraph">Temperaturas são medidas convencionais, porém cada forno é um forno, e muitas vezes a temperatura interna do forno não está 100% ajustada ao que diz no botão. Dito isso, eu recomendo que você tenha a mãos uma balança de precisão, para poder reproduzir com exatidão todas as receitas.</p>

<p class="wp-block-paragraph">Você pode congelar a massa crua e boleada por até 3 meses, ou refrigerar por até 3 dias. Para assar a massa congelada, é só adicionar 1 ou 2 minutos de forno e pronto! </p>



<p class="wp-block-paragraph">Depois de assados, você pode também congelar por até 3 meses, e esquentar alguns segundos no microondas ou alguns minutos no forno para servir. Ou você pode guardar em um recipiente fechado, em temperatura ambiente por até 7 dias.</p>
