<p>Eu sou apaixonada por doces com abóbora, pães com abóbora&#8230; tudo com abóbora! E eu amo o sabor, o cheiro impregnante que fica na casa e a textura desses rolinhos de abóbora com canela! Eles são como um &#8220;<em>glow up</em>&#8221; do Cinnamon Roll tradicional!</p>



<p>O melhor dessa receita é que você pode fazer ela completa em um dia, ou você pode adiantar o preparo e começar em um dia para terminar no outro!</p>

<h2 class="wp-block-heading" id="aioseo-como-preparar-o-pure-de-abobora">COMO PREPARAR O PURÊ DE ABÓBORA</h2>



<p>Na América do Norte eles usam sempre um purê de abóbora enlatado, que eu entendo que facilita muito a vida na hora de preparar receitas com abóbora! Porém, eu tenho que admitir que eu sinto que não tem sabor igual à abóbora assada! Principalmente quando fazemos com a nossa <strong>abóbora japonesa cabotiá</strong>.</p>



<p>Preparar o purê de abóbora cabotiá é super fácil, você só precisa:</p>



<ul class="wp-block-list">
<li>abóbora cortada em cubos médios (para reduzir o tempo de forno)</li>



<li>assadeira</li>



<li>papel alumínio</li>



<li>processador de alimentos</li>
</ul>



<ol class="wp-block-list">
<li>Pré aquecer o forno a 180ºC.</li>



<li>Colocar a abóbora cortada em cubos médios na assadeira, fechar com alumínio e levar ao forno por 20-30 minutos.</li>



<li>Processar até virar um purê denso (se precisar, adicionar 1 a 2 colh. sopa de água na hora de processar).</li>

<h2 class="wp-block-heading" id="aioseo-massa-de-pao-precisa-tempo">MASSA DE PÃO PRECISA TEMPO!</h2>



<p>Um ponto importante sobre essa receita é considerar o tempo de preparo e os tempos de fermentação. No total, você precisa separar pelo menos umas 4 horas para preparar essas belezinhas. Você também pode optar por preparar a receita em dois dias, usando a noite como um dos tempos de fermentação.</p>



<p>Seja qual for a sua escolha, o tempo de fermentação não precisa de trabalho ou atenção, você pode deixar a massa fermentando e ir fazer outras coisas!</p>

<p>Para substituir o fermento seco por fresco nessa receita, basta multiplicar o peso por 3, ou seja, precisaria de 24gr de fermento biológico fresco.</p>

Cobrir a assadeira com um plástico e deixar fermentar por mais 1 hora, ou até dobrarem de tamanho.</div></li><li id="wprm-recipe-1732-step-1-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Enquanto os rolls crescem, pré aquecer o forno a 180ºC.</div></li><li id="wprm-recipe-1732-step-1-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Assar os rolls por 35-40 minutos, ou até estarem bem dourados. Quando a cobertura estiver lisa, homogênea e cremosa, espalhar por cima dos Cinnamon Rolls e servir.</div></li></ul></div></div>

<p>Os Hot Cross Buns são uma tradição da páscoa britânica, e eles se caracterizam por terem várias especiarias na massa e por levarem esse desenho de cruz no topo. O sabor mais tradicional desse pãozinho é o de frutas cristalizadas com especiarias, que é muito gostoso tabém. Mas quem resiste a uma versão mais chocolatuda?</p>



<p>A massa é bem parecida a um brioche, com ovos, manteiga e leite. Eu adoro trabalhar com esse tipo de massa, elas ficam suaves, molinhas, mas não ficam pegajosas na hora de dividir e bolear.</p>

<p>Como eu falei, um dos diferenciais desse pão é o mix de especiarias que utilizamos. O aroma da massa é fenomenal, e o cheiro deles no forno vai fazer todos os seus vizinhos te pedirem um pedaço hahaha. Mas afinal, que especiarias são essas?</p>

<h2 class="wp-block-heading" id="aioseo-como-adiantar-os-preparos-dos-hot-cross-buns">COMO PRÉ PREPARAR HOT CROSS BUNS UM DIA ANTES</h2>



<p>Você pode fazer alguns passos da receita até um dia antes de assar. É só fazer a massa na tarde/noite anterior, formar a bola e deixar a primeira fermentação acontecer na geladeira. No dia seguinte você divide, faz as bolas e fermenta pela segunda vez antes de assar. Você pode dividir e bolear a massa fria direto da geladeira. </p>



<h2 class="wp-block-heading" id="aioseo-como-armazenar-os-hot-cross-buns">COMO ARMAZENAR OS HOT CROSS BUNS</h2>



<p>O ideal é armazenar os pães assados em um pote fechado em temperatura ambiente. Eles duram super bem entre 3-5 dias. Se você quer comer eles nos dias seguintes, eu recomendo re-aquecer eles no microondas ou até na chapa! Ficam deliciosos.</p>

INGREDIENTES &#8211; 340g de leite morno &#8211; 120g de açúcar (dividido na metade) &#8211; 1 pacote (10g) de fermento biológico seco &#8211; 520g de farinha de trigo &#8211; 30g de cacau em pó &#8211; 1 colh. chá de sal &#8211; 1 colh. chá de canela &#8211; 1 colh. chá de gengibre em pó &#8211; 1/4 colh. chá de pimenta da Jamaica em pó &#8211; 1/4 colh. chá de noz moscada em pó &#8211; 1 colh. chá de pasta de baunilha &#8211; 115g de manteiga em temp. ambiente &#8211; 275g de chocolate ao leite Mistura da Cruz: &#8211; 45g de farinha de trigo &#8211; 10g de cacau em pó &#8211; 15g de açúcar refinado &#8211; 45g de água MÉTODO  1. No bowl da batedeira, juntar o leite morno com metade do açúcar e o fermento. Deixar ativar por 10 minutos. 2. Adicionar a farinha, cacau, sal, especiarias, baunilha e bater com o gancho por 3-5 minutos, em velocidade baixa/média, até formar uma massa homogênea. 3. Adicionar a manteiga aos poucos e bater a massa por mais 10-15 minutos, ou até obter uma massa lisa e homogênea que desgruda facilmente do bowl. 4. Transferir a massa para uma superfície limpa, abrir um retângulo e adicionar o chocolate. Dobrar e amassar com a mão rapidament, até incorporar o chocolate. Transferir a massa para um bowl, fechar com plástico e deixar fermentar de 1h a 1h30min, até dobrar de tamanho. 5. Dividir a massa em 12 porções iguais, bolear cada porção e colocar sobre uma assadeira. Fechar com plástico filme (sem apertar) e deixar fermentar por 45min a 1h. 6. Enquanto isso, misturar todos os ingredientes para fazer a cruz e colocar em um saco de confeiteiro. 7. Pré aquecer o forno a 180ºC.  8. Cortar a ponta do saco de confeiteiro e fazer linhas continuas formando as cruzes sobre os pãezinhos. 9. Assar por 30-35min ou até os pãezinhos ficarem levemente dourados, retirar do forno e com os pães bem quentes, pincelar uma calda simples (já ensinei a fazer aqui) por cima. <p>É sempre importante ver o tipo de sal que é pedido nas receitas. Eu uso sempre sal de mar em cristais pequenos para a massa e flor de sal maldon para dar um toque especial por fora. Se você quiser usar sal fino para as preparações, ajuste a quantidade, já que o sal fino de mesa é mais salgado que os outros.</p>



<p>Temperaturas são medidas convencionais, porém cada forno é um forno, e muitas vezes a temperatura interna do forno não está 100% ajustada ao que diz no botão. Por isso, eu recomendo que você compre um termômetro de forno, assim você pode &#8220;descobrir&#8221; onde fica a &#8220;temperatura perfeita&#8221; no seu forno em particular. Geralmente fornos elétricos são mais precisos que fornos à gás, porém, com a temperatura ajustada e correta, você pode assar qualquer receita em qualquer forno.</p>

<p>Eu faço todas as minhas receitas em gramas, já que é a maneira mais precisa de fazer confeitaria. Xícaras não são uma medida de precisão! A confeitaria é uma ciência e requer precisão. Medir uma receita em xícaras não te dará essa precisão e pode trazer resultados inconsistentes.</p>



<p>Existem muitas maneiras de encher uma xícara com farinha e é impossível garantir que a sua maneira será igual a minha. Sem mencionar que uma xícara no Brasil e uma xícara no resto do mundo tem capacidades diferentes. Dito isso, eu recomendo que você tenha a mãos uma balança de precisão, para poder reproduzir com exatidão todas as receitas.</p>
