<p>Quando comecei a pensar em fazer uma cocada, eu sabia que queria algo diferente. Não só uma versão tradicional — eu queria criar um doce com mais camadas de sabor, mais textura, e que despertasse a curiosidade.</p>



<p>Foi aí que me veio a ideia de unir dois mundos que eu adoro: a cocada e o fudge. Eu sou completamente apaixonada por fudge, e achei que misturar o chocolate à base da cocada poderia trazer uma cremosidade nova, um toque aveludado que faz toda a diferença na mordida.</p>



<p>O desenvolvimento da receita não foi simples, ajustar textura, tempo de cocção, proporções… tudo exigiu testes, paciência e atenção aos detalhes. Mas o resultado valeu cada tentativa: uma cocada com textura macia, sabor marcante e uma identidade própria.</p>

<li><strong>Textura única:</strong> ela tem a estrutura firme o suficiente para ser cortada, mas com uma mordida macia, cremosa e que derrete na boca. Diferente da cocada tradicional, essa versão tem um acabamento mais liso e delicado.</li>



<li><strong>Uso do caramelo como base:</strong> a receita começa com um caramelo, que dá profundidade ao sabor e um tom dourado lindo.</li>



<li><strong>Leite de coco para mais sabor e equilíbrio:</strong> ao invés de só adoçar com leite condensado, essa receita leva leite de coco, que traz um perfume tropical, leveza e ajuda a equilibrar o dulçor do caramelo e do chocolate.</li>



<li><strong>Chocolate branco caramelizado como toque final:</strong> ele entra no fim da receita e transforma a textura, trazendo brilho, liga e um sabor levemente tostado e amanteigado. É o ingrediente que dá o acabamento de fudge e eleva a cocada a outro nível.</li>

<li><strong>Chocolate Branco Caramelizado (ou Gold):</strong> se você não tiver, ou preferir não fazer, pode substituir por chocolate branco normal!</li>



<li><strong>Coco seco:</strong> na receita usei apenas o fino, que hidrata mais rápido e contribui para uma textura mais cremosa. Se quiser mais rusticidade, você pode testar com parte do coco em flocos maiores.</li>



<li><strong>Leite de Coco:</strong> prefira sempre um leite de coco integral e mais espesso, para manter a cremosidade e o sabor marcante. Leites muito diluídos podem prejudicar o ponto da cocada.</li>

<p>Doces com amendoim são uma tradição tão gostosa da Festa Junina, que chega a ser um insulto passar sem comer ou preparar nenhum quitute né?! Pois bem, hoje eu trouxe essa receita de Pé de Moça, que é um derivado do nosso tradicional Pé de Moleque. A principal diferença entre os dois é a TEXTURA!</p>



<p>Enquanto o Pé de Moleque tem essa textura crocante de caramelo seco, o Pé de Moça tem uma textura mais cremosa e fácil de mastigar. A textura me lembra bastante os &#8220;Pecan Pralines&#8221; de Nova Orleans (que também são deliciosos).</p>



<h2 class="wp-block-heading" id="aioseo-ingredientes-faceis">INGREDIENTES DO PÉ DE MOÇA</h2>



<p>Os nossos doces tradicionais sempre utilizam ingredientes fáceis de encontrar e que temos em abundância aqui no Brasil.</p>



<ol class="wp-block-list">
<li><strong>Açúcar:</strong> nosso açúcar de cana maravilhoso é uma iguaria brasileira difícil de encontrar em outros países (onde o açúcar é de um tipo de beterraba), ele se transformara em um caramelo âmbar perfeito.</li>



<li><strong>Amendoim:</strong> precisa ser torrado e sem pele! Ele é quem traz o gosto de infância e brasilidade!</li>



<li><strong>Leite Condensado:</strong> vai ajudar a transformar o que seria um pé de moleque em um caramelo mais cremoso e elástico.</li>



<li><strong>Glucose:</strong> pode ser omitida, porém a glucose vai garantir que o doce não se cristalize e que mantenha o seu formato de corte sem derreter.</li>



<li><strong>Manteiga:</strong> com a sua gordura, ajuda no brilho e na textura final.</li>



<li><strong>Sal:</strong> onde tem açúcar, tem sal! O sal realça o sabor de tudo, deixando o doce mais interessante e delicioso!</li>

<p><strong>MEU PÉ DE MOÇA FICOU MUITO DURO</strong></p>



<p>Provavelmente isso aconteceu porque você cozinhou demais a mistura e passou do ponto, nessa caso já é possível ver que a textura quando colocamos na forma é mais dura, e da para corrigir aquecendo novamente e adicionando um pouco de leite.</p>



<p><strong>POSSO USAR PAPEL MANTEIGA NO LUGAR DO PLÁSTICO FILME?</strong></p>



<p>Eu não recomendo, isso porque para usar papel manteiga, teríamos que untar o papel com manteiga para não grudar no pé de moça. Já o plástico filme não gruda, não precisa ser untado e facilita na hora de desenformar.</p>



<p><strong>COMO ARMAZENAR O PÉ DE MOÇA</strong></p>



<p>O pé de moça deve ser armazenado fora da geladeira, em temperatura ambiente e fechado. Pode ser embalado um por um, ou fechadinhos todos juntos com plástico filme.</p>
