<p>Eu sou apaixonada por doces com abóbora, pães com abóbora&#8230; tudo com abóbora! E eu amo o sabor, o cheiro impregnante que fica na casa e a textura desses rolinhos de abóbora com canela! Eles são como um &#8220;<em>glow up</em>&#8221; do Cinnamon Roll tradicional!</p>



<p>O melhor dessa receita é que você pode fazer ela completa em um dia, ou você pode adiantar o preparo e começar em um dia para terminar no outro!</p>

<h2 class="wp-block-heading" id="aioseo-como-preparar-o-pure-de-abobora">COMO PREPARAR O PURÊ DE ABÓBORA</h2>



<p>Na América do Norte eles usam sempre um purê de abóbora enlatado, que eu entendo que facilita muito a vida na hora de preparar receitas com abóbora! Porém, eu tenho que admitir que eu sinto que não tem sabor igual à abóbora assada! Principalmente quando fazemos com a nossa <strong>abóbora japonesa cabotiá</strong>.</p>



<p>Preparar o purê de abóbora cabotiá é super fácil, você só precisa:</p>



<ul class="wp-block-list">
<li>abóbora cortada em cubos médios (para reduzir o tempo de forno)</li>



<li>assadeira</li>



<li>papel alumínio</li>



<li>processador de alimentos</li>
</ul>



<ol class="wp-block-list">
<li>Pré aquecer o forno a 180ºC.</li>



<li>Colocar a abóbora cortada em cubos médios na assadeira, fechar com alumínio e levar ao forno por 20-30 minutos.</li>



<li>Processar até virar um purê denso (se precisar, adicionar 1 a 2 colh. sopa de água na hora de processar).</li>

<h2 class="wp-block-heading" id="aioseo-massa-de-pao-precisa-tempo">MASSA DE PÃO PRECISA TEMPO!</h2>



<p>Um ponto importante sobre essa receita é considerar o tempo de preparo e os tempos de fermentação. No total, você precisa separar pelo menos umas 4 horas para preparar essas belezinhas. Você também pode optar por preparar a receita em dois dias, usando a noite como um dos tempos de fermentação.</p>



<p>Seja qual for a sua escolha, o tempo de fermentação não precisa de trabalho ou atenção, você pode deixar a massa fermentando e ir fazer outras coisas!</p>

<p>Para substituir o fermento seco por fresco nessa receita, basta multiplicar o peso por 3, ou seja, precisaria de 24gr de fermento biológico fresco.</p>

Caso você queira, pode também deixar a massa fazer essa primeira fermentação na geladeira da noite para o dia.</div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Recheio e Montagem</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-1732-step-1-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Misturar todos os ingredientes do recheio até obter uma pasta.</div></li><li id="wprm-recipe-1732-step-1-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Preparar uma assadeira com papel manteiga, ou untar com um pouco de manteiga.</div></li><li id="wprm-recipe-1732-step-1-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Desgaseificar a massa fermentada e abrir um retângulo de aproximadamente 60x40cm, deixando o mais retângular possível.</div></li><li id="wprm-recipe-1732-step-1-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Espalhar o recheio por todo o retângulo de massa e enrolar, formando um cilindro de 60cm de largura.</div></li><li id="wprm-recipe-1732-step-1-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Com uma faca, ou com um fio dental (como mostra o video), cortar 12 pedaços de 5cm e organizar na assadeira, deixando espaço entre cada um para que possam crescer. Cobrir a assadeira com um plástico e deixar fermentar por mais 1 hora, ou até dobrarem de tamanho.</div></li><li id="wprm-recipe-1732-step-1-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Enquanto os rolls crescem, pré aquecer o forno a 180ºC.</div></li><li id="wprm-recipe-1732-step-1-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Assar os rolls por 35-40 minutos, ou até estarem bem dourados. Retirar do forno e esperar uns 10-15 minutos antes de espalhar a cobertura.</div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Cobertura</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-1732-step-2-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Na batedeira, com a pá, bater o cream cheese com a manteiga e a baunilha até obter um creme liso e homogêneo. É importante que ambos estejam em temperatura ambiente para facilitar o processo.</div></li><li id="wprm-recipe-1732-step-2-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Adicionar o açúcar e bater. Adicionar o leite aos poucos, enquanto bate em velocidade média, verificando o ponto da cobertura (dependendo do açúcar impalpável você pode usar menos leite do que a receita pede). Quando a cobertura estiver lisa, homogênea e cremosa, espalhar por cima dos Cinnamon Rolls e servir.</div></li></ul></div></div>

<p><strong><em>Pumpkin Pie Spice</em></strong> é um mix de especiarias aromáticas muito comum na América do Norte, inicialmente ele era utilizado apenas na preparação da famosa <strong><em>Pumpkin Pie</em></strong> ou Torta de Abóbora, feita para o <em><strong>Thanksgivin </strong></em>(Ação de Graças). Porém, o <strong><em>Pumpkin Pie Spice</em></strong> virou tendencia e começou a ser utilizado em diversas outras preparações, depois que o Starbucks lançou o tão adorado Pumpkin Spice Latte, em 2003.</p>



<p>O tempero virou um ícone do outono e hoje em dia já é comercializado pronto por diversas empresas, inclusive aqui no Brasil pela <a href="https://www.bombayhs.com.br/pumpkin-pie-spice/p?srsltid=AfmBOoo64GGG4WCae04iUvyW7hEutYHDQmdj_knaRYIzHnTPnePQ5Q7v" target="_blank" rel="noopener" title="">Bombay</a>.</p>

<p>As especiarias em geral duram entre 1 a 2 anos, sempre quando são armazenadas em potes limpos e longe da umidade, do calor e do sol. Eu prefiro potes de vidro, por sentir que mantém melhor a qualidade das especiarias e não pega cheiros.</p>



<p>É importante frisar que com o passar do tempo, as especiarias vão perdendo a potencia, por isso, sempre antes de fazer o mix, assegure-se de que as especiarias que você está utilizando são novas e estão dentro do prazo de validade.</p>

<p>No inverno, praticamente todos cafés de Paris aderem ao ritual do Chocolate Quente, e de todos os lugares, um dos meus favoritos é a <strong><a href="https://www.angelina-paris.fr/" target="_blank" rel="noopener" title="Angelina Paris">Angelina Paris</a></strong>. Um ícone parisiense, com mais de 120 anos, esse “<em>Salon de Thé</em>” é conhecido por sua confeitaria, por seu serviço de excelência e claro… por seu “<em>Chocolat Chaud</em>”!</p>



<h2 class="wp-block-heading" id="aioseo-os-ingredientes-fazem-a-diferenca">OS INGREDIENTES FAZEM A DIFERENÇA</h2>



<ol class="wp-block-list">
<li><strong>Chocolate</strong>: o chocolate é a base, escolher um bom chocolate é o que vai definir o sabor final do chocolate quente! Eu gosto de fazer uma mistura entre amargo (70%) e ao leite (33%), porque sinto que dessa maneira, o chocolate quente não fica enjoativo!</li>



<li><strong>Creme de Leite Fresco</strong>: o creme de leite fresco (com 35% de gordura) é fundamental por seu teor de gordura, que é o que deixará o chocolate quente com a textura aveludada. Algumas cafeterias de paris utilizam manteiga, porém eu sinto que o creme de leite tem um sabor mais neutro e agradável!</li>



<li><strong>Leite</strong>: quando o assunto é textura, é preciso entender que a gordura é fundamental, por isso eu utilizo leite integral, mas você pode provar os leites mais magros. </li>



<li><strong>Especiarias</strong>: você pode adicionar a especiaria que quiser, eu acho que canela é fundamental, e como esse chocolate não vai cozinhar por muito tempo (para conseguir infusionar a canela em pau), eu prefiro usar em pó.</li>

<h2 class="wp-block-heading" id="aioseo-porque-nao-usamos-amido-de-milho">PORQUE NÃO USAMOS AMIDO DE MILHO?</h2>



<p>O amido de milho (maizena) é um ingrediente que vemos em muitas receitas de chocolate quente. Isso porque ele ajuda a engrossar a mistura, sem adicionar sabor ou cor.</p>



<p>Quando fazemos chocolate quente em uma quantidade muito alta, para vender em uma loja por exemplo, vale a pena utilizar um pouquinho de amido para ajudar a manter a textura e cremosidade do chocolate. Porém, quando fazemos em casa, eu particularmente não sinto a necessidade de engrossar o chocolate.</p>



<p>Minha receita tem uma textura que para mim é perfeita, e eu não gosto quando o chocolate quente fica tão grosso que você tem que comer de colher ao invés de tomar. </p>

<p>Na geladeira, ele dura 3 dias, fechado com plástico filme ou em um recipiente hermético. <p>Os cinnamon rolls foram criados na Suécia, por volta dos anos 20 e por lá são conhecidos como “<strong>kanelbulle</strong>”. A grande diferença entre a versão original e a versão americana é que na Suécia, eles colocam pérolas de açúcar no topo dos rolos, ao invés da cobertura com cream cheese. As duas versões são definitivamente deliciosas, porém pra mim, a cobertura de cream cheese é como a chave de ouro.</p>



<p>Nos EUA, os cinnamon rolls são bem populares como café da manhã, já aqui no Brasil, eu sinto que são mais para um café da tarde ou quem sabe um brunch, até porque, o nosso estilo de café da manhã é mais leve.</p>

<li><strong>Usar açúcar mascavo no recheio:</strong> você até pode usar açúcar refinado ou demerara, porém, o açúcar mascavo além de agregar muitíssimo mais sabor, também vai deixar o recheio mais úmido, tudo isso graças ao melado de cana.</li>



<li><strong>Cinnamon rolls perfeitamente assados:</strong> um dos maiores problemas que as pessoas relatam é quando os rolinhos ficam dourados por fora e crus por dentro. Isso acontece geralmente quando a temperatura do forno está muito alta, ou quando colocamos os rolos muito grudados, sem espaço para crescerem. Por isso é importante cozinhar na temperatura certa e usar uma forma com espaço suficiente.</li>



<li><strong>A melhor forma para assar:</strong> eu particularmente não gosto de assar em vidro, prefiro sempre formas de alumínio ou como a que usei aqui, de ferro fundido. É bom ter em conta que quando usamos cerâmica ou ferro fundido, o tempo de forno é um pouco maior que quando usamos uma forma fina de alumínio.</li>

<p>É sempre importante ver o tipo de sal que é pedido nas receitas. Eu uso sempre sal de mar em cristais pequenos para a massa e flor de sal maldon para dar um toque especial por fora. Se você quiser usar sal fino para as preparações, ajuste a quantidade, já que o sal fino de mesa é mais salgado que os outros.</p>



<p>Temperaturas são medidas convencionais, porém cada forno é um forno, e muitas vezes a temperatura interna do forno não está 100% ajustada ao que diz no botão. Por isso, eu recomendo que você compre um termômetro de forno, assim você pode &#8220;descobrir&#8221; onde fica a &#8220;temperatura perfeita&#8221; no seu forno em particular. Geralmente fornos elétricos são mais precisos que fornos à gás, porém, com a temperatura ajustada e correta, você pode assar qualquer receita em qualquer forno.</p>

<p>Sim, uma das vantagens de receitas fermentadas é que nós podemos usar a geladeira para retardar a fermentação e prolongar esse processo. Dessa maneira, se você quiser deixar tudo preparado um dia antes, mas assar no outro dia, é só deixar os rolinhos já na forma, fechados com plástico filme.
