<p>Os Alfajores de Maisena são um clássico argentino, que pode ser encontrado facilmente em qualquer cafeteria ou confeitaria e que fazem parte da memória afetiva de praticamente todos os argentinos.</p>



<p>Compostos básicamente por uma massa que desmancha na boca, recheio de doce de leite e decoração de coco ralado, essas bolachinhas são absolutamente viciantes. Eu particularmente sou apaixonada pela simplicidade do alfajor de maisena!</p>



<h2 class="wp-block-heading" id="aioseo-caracteristicas-do-alfajor-de-maizena">CARACTERÍSTICAS DO ALFAJOR DE MAIZENA</h2>



<ul class="wp-block-list">
<li><strong>Massa suave e quebradiça</strong>: devido à mistura de maisena com farinha, a massa fica com essa textura suave e que desfaz na boca.</li>



<li><strong>Cor branquinha</strong>: uma das grandes características do alfajor de maisena é que ele não adquire uma coloração dourada no forno, como assamos em temperatura mais baixa, ele se mantém branquinho.</li>



<li><strong>Doce de leite</strong>: a textura cremosa do doce de leite contrasta perfeitamente com a massa frágil.</li>



<li><strong>Coco ralado</strong>: o coco ralado, além de um toque de sabor, ajuda a “selar” o doce de leite, impedindo que se forme uma película seca.</li>
</ul>



<h2 class="wp-block-heading" id="aioseo-doce-de-leite-na-panela-de-pressao">DOCE DE LEITE NA PANELA DE PRESSÃO</h2>



<p>Quando queremos rechear com doce de leite, é muito comum nos depararmos com doces de leite de textura mais mole, que não aguentam peso e acabam vazando para fora do bolo ou bolacha.</p>



<p>Eu particularmente prefiro fazer meu doce de leite, em lata de leite condensado na panela de pressão. Assim, posso controlar a textura exata dependendo do tempo de cocção, e não preciso adicionar algum espessante para engrossar o doce. Para fazer o doce de leite na pressão:</p>



<ol class="wp-block-list">
<li>eu coloco duas latas de leite condensado deitadas dentro da panela de pressão.</li>



<li>Cubro as latas com água e levo à pressão por 30 minutos.</li>



<li>Deixo a pressão sair naturalmente e depois deixo as latas esfriarem por completo antes de abrir.</li>
</ol>



<p>O resultado é um doce de leite consistente, de cor mais clara e saborosíssimo.</p>

<h2 class="wp-block-heading" id="aioseo-nota-sobre-sal-e-temperatura-de-forno">NOTA SOBRE SAL E TEMPERATURA DE FORNO</h2>



<p>É sempre importante ver o tipo de sal que é pedido nas receitas. Eu uso sempre sal de mar em cristais pequenos para a massa e flor de sal maldon para dar um toque especial por fora. Se você quiser usar sal fino para as preparações, ajuste a quantidade, já que o sal fino de mesa é mais salgado que os outros.</p>



<p>Temperaturas são medidas convencionais, porém cada forno é um forno, e muitas vezes a temperatura interna do forno não está 100% ajustada ao que diz no botão. Por isso, eu recomendo que você compre um termômetro de forno, assim você pode &#8220;descobrir&#8221; onde fica a &#8220;temperatura perfeita&#8221; no seu forno em particular. Geralmente fornos elétricos são mais precisos que fornos à gás, porém, com a temperatura ajustada e correta, você pode assar qualquer receita em qualquer forno.</p>
